BACON RANCH PEA SALAD RECIPE | ALLRECIPES
This easy salad came about in an attempt to satisfy my son who loves peas and my husband who doesn't. It has become a huge hit. You may want to double the recipe if you want any leftovers!

Steps:
- Place bacon in a skillet over medium-high heat, and cook until evenly brown. Drain, crumble, and set aside.
- Bring the water to a boil in a pot. Boil the peas 1 minute, until just tender, and drain. Cool peas under cold running water.
- In a bowl, toss together bacon, peas, onion, Ranch dressing, and Cheddar cheese. Refrigerate 30 minutes or until chilled before serving.

- Mix the sour cream, mayonnaise, salt, pepper, and vinegar together to make the dressing. Add more salt and pepper to taste. Stir 2/3 of the dressing into the peas until the peas are coated. Gently stir in the bacon, onion, cheese, and parsley until all combined. Taste and adjust seasonings. Cover with plastic wrap and refrigerate 2 to 4 hours before serving. - 1. Bring a large pot of salted water to a boil. Fill a large bowl halfway with ice and then with enough cold water to cover the ice. Have a large slotted spoon at the ready. Cook the sugar snap peas in the boiling water until they're bright green and softened just a bit, about 2 minutes. Using the slotted spoon, transfer the sugar snap peas to the ice water to cool completely, then drain them on paper towels until you're ready to dress them. 2. In the bowl of a food processor, combine the milk, yogurt, mayonnaise, lemon juice, mustard, salt, paprika and 4 ounces of the ch?vre; process until completely smooth. Pour the mixture into a medium bowl, scraping the bottom of the food processor bowl in case any ch?vre has stubbornly coagulated there. Stir in the garlic, shallot, chives, parsley and dill. Season to taste with the Tabasco and pepper. Add more salt if needed. 3. In a large bowl, toss the sugar snap peas in the dressing so they're completely coated. Sprinkle the remaining 2 ounces of ch?vre over the salad and then turn it out onto a platter to serve.
