WHOLEMEAL PASTRY | PASTRY | RECIPES | DOVES FARM

Wholemeal Pastry | Pastry | Recipes | Doves Farm image

This quantity of pastry is sufficient for the base and top of a 18cm/7” pie, a quiche such as our Caramelized Onion Tart, or many small tarts. Gather up any unused pastry dough and trimmings, then wrap and freeze them for use at a later date.

Number Of Ingredients 4

200 g Doves Farm Organic Fine Plain Wholemeal Flour
100 g butter
6-8 tbsp cold water
butter, for dish

Steps:

  • Pre-heat the oven. Rub a little butter around the inside of your dish or tin. Put the flour into a mixing bowl. Chop the butter into small cubes and add them to the bowl. Using a pastry blender or fork, mash the butter cubes into the flour until it resembles breadcrumbs. Stir in enough of the water to bring the pastry together into a soft dough. Cover the dough and leave it to stand for 15 minutes. Dust the work surface with flour, put the dough in the middle and sprinkle it with flour. Roll out the pastry into a circle 5cm/2” larger than your dish and lift it into the dish, OR simply press the pastry into the baking dish using your fingers. Cut away any pastry that hangs over the edge of your dish. Continue as per your recipe.

PUFF PASTRY VEGETABLE TART | JAMIE OLIVER VEG RECIPES

Puff pastry vegetable tart | Jamie Oliver veg recipes image

These are great to make with kids. You will need: an apron, a table knife, rolling pin, baking tray, tablespoon, chopping board, kitchen cloth, mixing bowl, speed peeler, cheese grater and oven gloves.

Total Time 35 minutes

Yield 4

Number Of Ingredients 12

1 x 500 g block of ready-made puff pastry
plain flour for dusting
4 teaspoons pesto
1 handful of mixed, ripe cherry tomatoes
8 asparagus spears
4 baby courgettes
2-3 jarred roasted peppers
½ a bunch of fresh basil
olive oil
8 black olives optional
1 x 100 g ball mozzarella
20 g Parmesan cheese optional

Steps:

    1. Turn on the oven to 200ºC/gas 6. Carefully cut the pastry block in half with a table knife. Wrap the other half and refrigerate or freeze for later.
    2. Dust some flour onto a clean work surface and, using a rolling pin, roll out the pastry into a square, measuring 26cm x 26cm. Cut into 4 equal squares.
    3. Place the pastry squares on a baking tray, leaving a space between each.
    4. Using the back of a spoon, spread the centre of each square with pesto, but don’t spread it onto the edges.
    5. Squash the tomatoes into a large mixing bowl, then snap the asparagus spears into 3cm pieces. Keep the lovely pointy tips and a little of the stalk, but discard the end 3cm.
    6. Using a speed peeler, carefully shred the courgettes into ribbons. Tear the roasted peppers into strips and add to the bowl.
    7. Pick the basil leaves, reserving the pretty ones for later. Place the large ones in the mixing bowl.
    8. Mix the vegetables together in the bowl, adding a splash of oil. Pile a little of the mixture on each pesto-smeared tart and top with two olives (if using).
    9. Break up the mozzarella and place little bits on top of each tart – this will make it gooey like a pizza. Grate over some Parmesan (if using).
    10. Bake for 15 to 20 minutes, until the pastry is golden and the cheese is all bubbly.
    11. Once the tarts are ready, allow to cool slightly. Sprinkle with the reserved basil leaves and serve with a nice salad for lunch.

    1. Preheat the oven to 220ºC/425ºF/gas 7.
    2. Unroll the pastry, cut it in half lengthways, then cut each half widthways into 8 equal strips.
    3. Flatten the chicken breasts by pounding with your fist until the fat ends are the same thickness as the skinny ends.
    4. Place them in a roasting tray, season with sea salt and black pepper, spread over the pesto, then lay 4 overlapping strips of pastry over each breast, tucking them under at the edges. Brush with a little olive oil.
    5. Lightly dress the tomato vines in olive oil, season and put into a second tray. Place the chicken tray on the top shelf of the oven with the tomatoes below, and cook for 20 minutes, or until the pastry is golden and the chicken is cooked through.
    6. Meanwhile, line up the beans, trim off just the stalk ends, then cook in a pan of boiling salted water for 7 minutes, or until tender.
    7. Remove the chicken to a board with half the tomatoes, squashing the rest in the tray and discarding the vines. Drain and toss in the beans, taste and season to perfection.
    8. Slice the chicken at an angle and serve on top of the beans, with the whole tomatoes.

  • Hot Water Pastry Put the flour and salt into a bowl and stir to combine. Break the egg into the middle of the flour. Beat the egg, in the bowl, combining it with the flour until it is dispersed through the flour. Measure the water into a saucepan, add the lard and put over a medium heat. As soon as the pan comes to the boil, remove it from the heat. Pour the hot liquid into the flour mixture while stirring. Using your hands gather the mix together to form a soft and smooth ball of dough. Cover and leave for 20 minutes. Pork Pie Filling Measure the sage, salt, mace and ground pepper into a small bowl and stir to combine. Finely grate the lemon rind into the bowl and stir to make the seasoning mix. Put the pork mince, sausage meat and chopped bacon into a mixing bowl and mix together well. Stir in the seasoning mix. Raised Pork Pie Pre heat the oven. Rub butter generously around the base and sides of a 15cm/6” round, loose bottom, deep cake tin or insert a baking liner. Take two thirds of the pastry and press it into the bottom and sides of the dish. Tip the pie filling into the pastry lined tin and smooth the top. Moisten the pastry rim with water. Lightly dust the work surface with flour, put the remaining dough in the middle and sprinkle it with more flour. Roll the pastry into a 15cm/6” circle. Brush a little water around the circumference of the pastry circle. Press a 3cm/1¼” cookie cutter or egg cup into the centre of the pastry and remove the small pastry circle. This will allow steam to escape during cooking. Transfer the pastry circle over the filled pie, inverting it so the moistened side is down. Press, pinch or crimp together the outside edges using your fingers or the flat prongs of a fork. Brush the remaining beaten egg over the top of the pie. Place the pie on an oven tray and bake for 70-80 minutes until golden. Allow the pie to cool completely in the tin. Carefully push and lift the cold pie out of the tin. Wrap the pie and refrigerate. Best eaten within 3-4 days.

Allow it to cool for 10 minutes, then slowly pour it into the pie through the small hole (you could use a funnel or small jug) until full – you may not need all the stock. Chill the pie for a few hours.

HOW TO MAKE PERFECT CHOUX PASTRY - THE FLAVOR BENDER
