1 tablespoon salt
1 cup long- or short-grain brown rice

Steps:

  • In a large pot, bring to a boil 2 to 3 cups of water and the salt. Add rice and boil for about 15 minutes, stirring occasionally. Drain. Refrigerate if it will be more than a couple of hours before you use it.

The grains are puffy and separate, and they absorb the curries beautifully. Indian parboiled rice can be ordered from iShopIndian.com; but if this type is not available, American-style converted rice or regular long-grain white rice are both good substitutes. (North Indian basmati rice would not be served at a Sadhya.) This recipe is part of our menu for Sadhya, a South Indian feast.
