- "Combine 1 cup flour, sugar, yeast, and salt, blending well. Add oil and water gradually, until well moistened, and then stir until a smooth batter is created. Add additional flour by hand until the dough pulls away from the sides of the bowl. Turn out onto a floured surface and knead in more flour until a smooth, elastic dough is created. Cover loosely with plastic and allow to rest about fifteen minutes in a warm place. Preheat convection oven to 375 degrees F. Press dough into two twelve inch pizza pans and prick with a fork. Allow to rest for ten to fifteen minutes in a warm place. Brush crusts with oil and prebake for five minutes. Top as you wish, then bake again until crust is crisp and cheese is melted. "
