Best Ever Panama Canal Zone Fruit Cookies image

"This recipe for the best ever fruit cookies which remain soft and chewy until you eat them is from the Panama Canal Company. These cookies were sold to residents of the Canal Zone up until 1979, under the Panama Canal Company’s bakery trademark of “Mary Jane”."

2 1/2 cups sugar
1 1/4 cups shortening
1 teaspoon salt
1 teaspoon baking soda
4 cups all purpose flour
3 each eggs
1/3 cup water
1 1/2 teaspoon vanilla extract
1 cup glazed fruit (e.g. fruitcake medley)
1 cup raisins

Steps:

  • "Preheat oven to 350. In a large bowl cream Sugar, Shortening, Salt, and Baking Soda. Put rest of ingregients in Cuisinart until fruit and raisins are finely chopped. Combine with creamed sugar in large bowl. Add the 4 cups of Flour a little at time mixing well. Use 1 tablespoon batter for each cookie. Drop on non stick cookie sheet. Bake for about 15 minutes. Tip: If these get crisp after baking, add slice of fresh apple to cookie jar and cookies will stay soft."

This is a simple recipe for ginger bread. It is sold mostly in the Chiriqui province of Panama and is very popular. It uses fresh ginger so the flavor is hot and delicious. Try it with a glass of warm milk!

7?¼ cups all-purpose flour
½ teaspoon salt
½ teaspoon baking powder
½ cup vegetable shortening
¾ pound fresh ginger root, minced
2 pints molasses

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Grease and flour a 15x20-inch baking dish. Whisk together the flour, salt, and baking powder in a bowl.
  • Mix together the shortening, ginger, and molasses until smooth. Stir in the flour mixture until no dry lumps remain. Pour into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 45 minutes. Let cool for 15 minutes. Cut into 2-inch squares. Cool 2 to 3 more hours before serving.

  • In a large bowl, cream butter and confectioners' sugar until light and fluffy. Add flour, salt and extract and mix well. Divide dough into four portions. Tint one portion green and one red; leave remaining portions plain., Divide each portion into thirds; shape each into a 6-in. log. Flatten into triangular logs, bending the top of one point slightly (to give finished cookies a pinwheel effect). Assemble one large roll by alternating three green and three plain logs. Wrap in plastic. Repeat with red and remaining plain dough. Refrigerate 4 hours or until firm., Preheat oven to 375°. Unwrap dough and cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake 8-10 minutes or until edges are golden brown. Cool on pans 1 minute. Remove to wire racks to cool., Cut 6-in.-square pieces of cellophane or plastic wrap to wrap each cookie; twist ends securely or tie with a ribbon.
