1 package active dry yeast
¼ cup warm water (105 degree F to 115 degree F)
1 cup cream-style cottage cheese
2 tablespoons sugar
1 beaten egg
1 tablespoon dried minced onion
2 teaspoons dillseed
¾ teaspoon salt
¼ teaspoon baking soda
2?¼ - 2?¾ cup all-purpose flour
1 tablespoon butter or margarine
Coarse salt

Steps:

  • In a large bowl, stir together yeast and warm water. Set aside for 5 minutes.
  • Add cottage cheese, sugar, egg, onion, dillseed, salt, and baking soda. Beat with an electric mixer on low to medium speed until well mixed. Beat in as much of the flour as you can. Turn out onto a well-floured surface. Knead in enough of the remaining flour to make a moderately stiff dough that's smooth and elastic (6 to 8 minutes total).
  • Place dough in a large greased bowl; turn once to grease surface. Cover and let rise in a warm place until doubled (about 1 hour).
  • Punch the dough down. Turn out onto a lightly floured surface. Let rest for 10 minutes.
  • Form into one large round loaf or two smaller round loaves. Place on a greased baking sheet. Flatten large loaf into a 6-inch circle and small loaves into 4-1/2-inch circles. Cover; let rise until nearly doubled (about 30 minutes).
  • Bake in a 350 degree F oven about 30 minutes for the large loaf or 20 minutes for smaller loaves or until bread sounds hollow when tapped. Transfer to wire racks. Brush tops of loaves with butter. Sprinkle with coarse salt. Cool completely. Makes 1 large or 2 smaller loaves (12 servings).

3 1/3 cups flour
1/4 teaspoon baking soda
1 1/2 teaspoons salt
1 unbeaten egg (at room temperature)
1/4 cup water
3/4 cup cottage cheese
3/4 cup sour cream
3 tablespoons sugar
3 tablespoons minced dried onion
2 tablespoons dill seeds
1 1/2 tablespoons butter

Steps:

  • In the order listed, place dry ingredients and egg in the bread machine.
  • Warm the next set of ingredients and add them.
  • Select white bread setting on bread machine and press start.
  • Brush top lightly with a little melted butter when machine enters bake cycle if you wish.
  • If you don't have a bread machine you can knead by hand let rise and bake in 2 loaf pans.

FEATHER LIGHT WHITE ONION DILL BREAD | JUST A PINCH RECIPES
I stumbled upon this recipe in one of my mom's church cookbooks from the 60's. I was intrigued by the use of cottage cheese in the dough and so I had to check it out. It is absolutely wonderful! Very moist while being light and airy... a combination that is really hard to achieve. The onion and dill flavors are very subtle and the cottage cheese dissolves and is not noticeable within the bread. This bread LOVES to rise! After placing it in the oven, it rose at least another 2" above the pan, as you can see by the photo. Prep time does not include rise time. Enjoy! Photos are mine.
