How to make freeze dried strawberries at home with Harvest Right.

1 quart strawberries

Steps:

  • Wash well and pat dry your strawberries.
  • Slice thinly, but not too thin. I find that I can get about 5 slices out of each regular sized strawberry.
  • Place on to the freeze dryer sheets. Repeat until you have all the trays covered. I personally like to just line them up, but you can fill the trays overlapping with strawberries. I just find that they dry better when they are in a single layer.
  • Place into the freeze dryer and start your machine
  • Press “Not Frozen” and let the machine do the rest! I like to add two extra drying hours.
  • Once your freeze dried strawberries are done, remove from the Harvest Right freeze dryer right away and place in a mylar bag with an oxygen absorber.

Number Of Ingredients 11

3 cups flour
1 cup sugar
2/3 cup butter, melted
2 eggs, beaten
1 cup buttermilk
1/2 teaspoon salt
1 Tablespoon baking powder
1 teaspoon vanilla bean paste (or just vanilla)
10 large, fresh strawberries, hulled
1 cup of freeze dried strawberries
large sugar crystals for the tops of the muffins (optional)

Steps:

  • Preheat the oven to 350 Fahrenheit.
  • Use a blender to combine the buttermilk and fresh strawberries
  • Combine wet ingredients
  • Mix in remaining dry ingredients, except for the freeze dried strawberries.
  • Mix in freeze dried strawberries
  • Scoop batter in lined muffin tins and top with large sugar crystals.
  • Bake for 25 minutes
