This can't-fail recipe is very easy to make. They are the only rolls I make anymore. Everyone wants the recipe.

Number Of Ingredients 10

1 cup milk
½ cup shortening
¼ cup white sugar
1 cup cold water
1 egg
2 teaspoons active dry yeast
5?½ cups all-purpose flour, divided
1 teaspoon baking powder
½ teaspoon baking soda
1?½ teaspoons salt

Steps:

  • Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in the shortening and sugar; stir until melted. Add cold water and let cool until lukewarm.
  • Pour milk mixture into a large bowl. Add egg and yeast; mix well. Beat in 3 cups of flour and let stand for 20 minutes.
  • Sift in baking powder, baking soda, salt, and 1 cup flour. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl, and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • Divide the dough into 12 equal pieces. Divide each piece in half and form into 24 rolls. Place the rounds in a lightly greased 9x13-inch baking pan or on lightly greased baking sheets. Cover the rolls with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until golden, 15 to 20 minutes.

3/4 cup warm water, divided
1 (1/4 ounce) package active dry yeast
1/2 cup buttermilk, warm
1 egg, beaten
2 tablespoons unsalted butter, melted
2 tablespoons sugar
1 1/2 teaspoons salt
3 1/2 cups bread flour

Steps:

  • Place 1/4 cup of the warm water in a small bowl; stir in yeast. Let stand 10 min or until yeast is dissolved and foamy.
  • Meanwhile, whisk remaining 1/2 cup water, buttermilk, egg, butter, sugar and salt in large bowl. Whisk in yeast mixture to combine.
  • Slowly stir in 3 1/2 cups of flour, using hands if necessary, until soft dough forms. Slowly add up to 1/4 cup additional flour if needed to form soft dough that pulls away from sides of bowl.
  • On lightly floured surface, knead dough 7 to 10 min or until smooth and elastic. Place dough in lightly buttered large bowl; turn to coat all sides with butter.
  • Cover with plastic wrap and towel; let rise in warm place until doubled in size, about 1 hour.
  • Line baking sheet with parchment paper. Gently punch down dough; turn out onto lightly floured surface. Divide dough in half; cut each half into 8 pieces.
  • Roll each piece into desired shape; place on baking sheet. Spray plastic wrap with cooking spray, cover rolls. Let rise in warm place 30 to 40 min or until double in size. (To make ahead, shape rolls, place on baking sheet and cover with greased plastic wrap. Refridgerate 4 hours or overnight. When ready to bake, let stand at room temperature 30 min before baking.).
  • Heat oven to 375*. Bake 17 to 20 min or until light golden brown.

  • 1. In a medium mixing bowl, pour the lowfat milk over 1/4 c. of the sugar, the softened butter, and the salt. Stir to heat the butter. Let cold to hot. 2. Meanwhile, in a small measuring c., mix the yeast with the hot water and the remaining 1 tsp. sugar. Let stand till foamy, about 5 min. 3. When the lowfat milk mix has cooled to hot, add in the yeast mix, the egg, and 2 1/2 c. of the flour. Beat well with a wooden spoon to create a satiny smooth batter. Add in sufficient of the remaining 1 to 1 1/2 c. flour to make a somewhat sticky dough which leaves the sides of the bowl. Turn out on a lightly floured surface and knead lightly till smooth and elastic, letting the dough pick up only sufficient flour to prevent sticking. 4. Place the dough in a buttered bowl, and turn once to butter the top. Cover with plastic wrap and let stand till doubled, 1 to 1 1/2 hrs. 5. Punch down the dough; divide into 3 parts. Working with 1 part at a time, roll out to a 12-inch circle on a lightly floured surface. Spread with 1/3 of the melted butter. Cut, as for pie, into 8 equal wedges. Roll each wedge from the wide end to the point and place, point-side down, on a nonstick or possibly greased baking sheet. Curve the ends slightly to create a crescent shape. Cover with plastic wrap and let rise till doubled, about 1 hour. 6. Meanwhile, preheat the oven to 375F. 7. Bake the rolls in the oven till proportionately browned, 12 to 15 min. Serve warm. GRANDMA'S YEAST ROLLS RECIPE | ALLRECIPES
I have adapted these yeast rolls from my grandmother's yeast bread recipe. I have increased the sugar to create a little sweeter roll than Grandma used to make and replaced her refrigerated cake yeast with dried (easier availability). They are delicious served with Danish Lurpak® butter (it's a little tangy, just like Grandma's)! Rolls can be made the night before and reheated, covered in foil, at 300 degrees F for about ten minutes.
