Rich and buttery. If you don't have almond extract, you can use 2 teaspoons of vanilla in its place. Any type of nuts can be used in place of the walnuts.

1 cup butter, softened
½ cup confectioners' sugar
½ teaspoon salt
1 teaspoon almond extract
2 cups all-purpose flour
1?½ cups finely chopped walnuts

Steps:

  • Mix butter or margarine with sugar until creamy. Add salt, almond or vanilla extract, flour, and nuts. Mix WELL.
  • Chill dough until firm enough to handle.
  • Preheat oven to 350 degrees F (180 degrees C).
  • Using fingers, shape dough into 1 inch balls or crescents. Place on ungreased cookie sheet. Bake for 12 to 15 minutes or until light brown. While cookies are still warm, roll in powdered sugar. These keep well.

Buttery cookies that just melt in your mouth! Every Thanksgiving I have to make like 3 batches and they go soooooo fast! They're great for Christmas goodies as well. They taste great at room temperature, in the fridge, or in the freezer.

2 cups all-purpose flour
1 cup butter, softened
5 tablespoons confectioners' sugar
2 cups finely chopped walnuts
6 cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix flour, butter, and 5 tablespoons confectioners' sugar together in a bowl until dough is golden; mix in walnuts. Roll dough into marble-sized balls; arrange on a baking sheet.
  • Bake in the preheated oven until balls are light golden brown, 10 to 12 minutes.
  • Place 6 cups confectioners' sugar in a bowl; roll balls in the confectioners' sugar until completely coated; place balls on a plate to cool completely. Roll balls in the confectioners' sugar a second time.

Also known as Russian tea cakes, these small spheres of buttery vanilla shortbread have crunchy pecan pieces dispersed throughout their crumbly texture. A step requiring no more than 10 minutes, toasting the pecans first forces the pecans to release their oils and take on a richer and nuttier flavor.
