In search of a nacho cheese recipe, I stumbled upon this recipe. It called for processed American cheese, but that was not going into my dish. I tweaked it a bit and I hope you enjoy. Note: This makes a good base recipe. You can leave it as is or you can put your spin on it.

Number Of Ingredients 6

Ingredients

2 tablespoons butter
2 tablespoons flour
1 cup milk
1/2 teaspoon salt
8 ounces cheddar cheese, shredded
cayenne

Steps:

1. Melt butter in a medium sauce pan on med-high heat. Wisk in flour, salt, and milk.
2. Add cheese and mix until smooth. Add cayenne to enhance color and flavor.
3. If you want you can add ro*tel and/or taco meat to make a more complete nacho cheese.

Ingredients

1 lb corn tortilla chips (white)
1 lb hamburger (can be substituted with 2 or 3 boneless skinless chicken breasts)
15 ounces refried beans
salsa
taco seasoning
16 ounces shredded monterey jack cheese
1 -2 tomatoes
green onion, if desired

Steps:

Preheat oven to 350.
Cook hamburger meat in skillet, drain.
Wash meat off in sink in a strainer.
Spread chips on cookie sheet.
Bake chips in oven for 25 minutes.
When chips are heated up, add all ingredients.
Put back in oven for about 10 minutes.
