- Preheat oven to 325°.
- Arrange chicken pieces in a shallow baking dish.
- In a saucepan over med-low heat, combine remaining ingredients. Heat and stir until melted and well-blended.
- Pour over chicken pieces.
- Bake at 325° for about 60-75 minutes (or until done); basting chicken occasionally.

Steps:
- Preheat your oven to 375 degrees f. and lightly rub or spray a large baking dish with cooking oil such as avocado oil.
- Pat your chicken drumsticks dry with paper towels.
- Place the chicken drums into the prepared dish and season with a pinch of sea salt and pepper.
- In a small bowl, whisk mustards, honey, paprika and garlic, and onion powder until smooth. Yes, we use TWO types of dijon mustard in this recipe for AWESOME flavor!
- Pour this sauce evenly over the chicken and toss gently to coat well.
- Bake for 35-40 minutes or until cooked through (internal temp should read 165F).
- Turn on the broiler and broil chicken for additional 2-3 minutes just until they crisp up and get that nice glaze on top. YUM!
- Carefully remove from oven and garnish with parsley if desired.
- Serve immediately.

- Preheat oven to 450°. Toss potatoes and carrots in bottom of large baking dish with 1 tablespoon oil. Season with salt and pepper. Pat chicken dry with paper towels, drizzle with remaining tablespoon oil, and season with salt and pepper. Arrange, skin-side up, on top of vegetables in baking dish. In a small bowl, stir together mustards, maple syrup, thyme, and red pepper flakes. Brush on top of chicken and drizzle any extra over vegetables. Roast chicken until golden and a thermometer inserted into thickest part of thigh registers 160°, about 35 minutes. Remove from oven and brush thighs with chicken drippings. Turn oven to broil and broil thighs until deeply golden, 2 to 3 minutes. Let cool slightly, then sprinkle with parsley before serving.
