Mochi Mooncake recipe - Simple Chinese Food image

Mochi is a traditional Chinese food. The practice is slightly different in different places and the name is different. Mochi is usually called in the south. The Hakka people call it ma qi, while the South Fujianese generally call it ma ji, and call it in Jiangsu and Zhejiang. It’s mochi. In terms of practice, mochi is very similar to rice cakes in the north.

125 grams (mochi moon cake premix powder) Ready-mixed powder
1050 grams Red bean paste
100 g water
One Moon cake mould
62.5g White sugar

Steps:

  • First mix the mochi powder and water and mix well
  • Put 1 in the steamer and steam over high heat (about 40 minutes), set aside
  • Then put the sugar and water in the pot, boil, set aside
  • Then add 3 to 2 and stir evenly to form the skin
  • Divide the pie crust and bean paste filling into 20g and 35g respectively, and make them into crusts
  • Wrap the bean paste filling with the skin, tighten the interface
  • Finally, it is imprinted and molded with a mold, and the mold can be demolded

Pastry chef Doris Hô-Kane of Ban Bè in Brooklyn uses a microwave to make both the chewy mochi skin and rich black sesame–chocolate filling of her beautiful Bánh Deo (Mochi Mooncakes), greatly reducing both their cook time and the number of pots and pans to be cleaned after. H?-Kane's mochi mooncakes use a combination of black tahini and chocolate to create a nutty, smooth, and creamy filling. The chewy mochi coating can be kept plain, or you can add flavor and color by mixing in some matcha powder. Black tahini is especially nutty in flavor, but in a pinch, regular tahini will do. The mochi dough is sticky, so you might prefer to wear plastic gloves as you form the mooncakes. You will need a wooden mooncake mold meant to hold 50 grams, about 1 1/2 inches in diameter.

1 cup granulated sugar
½ teaspoon rice vinegar
2 teaspoons unsweetened matcha powder
