I ate at home with my baby at noon. There are always leftovers when I cook too much. I have to diversify in order to balance nutrition. So today I mixed several ingredients to make a tofu soup. I cooked it in a microwave oven. It was super easy. In the end, I poured some oil in order to taste a little better and to be more beautiful. In fact, it can be omitted. This also reduces pot washing. Haha, this dish uses nutritious tofu and protein-rich eggs. 1 box Lactone Tofu
2 pcs egg
70 grams Pork (lean)
1 piece Red pepper
1 Garlic sprouts
1 small piece ginger
8 grams Peanut oil
4 grams salt
3 grams sesame oil
1 petal garlic
1 tbsp Soy sauce

Steps:

  • Prepare the raw materials
  • Mince red pepper
  • Finely chop garlic sprouts, finely chop ginger and garlic
  • Mince lean meat
  • Eggs, minced meat, tofu, red pepper, garlic sprouts, all together
  • Add appropriate amount of salt, sesame oil, light soy sauce, and mix well
  • Pour into a dish that can be put into the microwave
  • Put it in the microwave on high heat for about 12 minutes
  • Heat oil in a pot, sauté ginger and minced garlic
  • Take the tofu soup out of the microwave, drizzle with hot oil, sprinkle with chopped green onion, and prepare

½ (12 ounce) package uncooked lasagna noodles
1 (12 ounce) package firm tofu, crumbled
2 eggs
¼ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon ground nutmeg
2 tablespoons milk
1 cup spaghetti sauce
1 tablespoon dried parsley
2 cups shredded mozzarella cheese, divided
½ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add lasagna and cook for 8 to 10 minutes or until al dente; drain.
  • In a medium bowl combine tofu, eggs, salt, pepper, nutmeg, milk, spaghetti sauce, parsley and 1 cup of mozzarella cheese. Spread a layer in the bottom of a 9x13 inch baking dish.
  • Layer lasagna noodles with the sauce mixture, ending with sauce. Sprinkle with remaining mozzarella and Parmesan cheese.
  • Bake in preheated oven for 25 to 35 minutes.
