sugar

1/2 c.

fresh mint

2 qt.

strawberries, halved or quartered if large

1/2

honeydew melon, peeled, seeded, and chopped

1 c.

red grapes, halved

1 c.

green grapes, halved

kiwis, peeled and cut into half-moons

1/3 c.

pomegranate seeds

Steps:

  • For the mint syrup: Bring the sugar and 1/2 cup water to a boil in a small saucepan over medium heat. Remove from the heat and add the mint. Let steep until the syrup cools, 20 to 30 minutes. Pour the syrup through a fine-mesh strainer, discarding the mint. Refrigerate in a covered container until ready to serve. For the salad: Combine the strawberries, melon, grapes, kiwis, and pomegranate seeds in a large bowl and toss to combine. When ready to serve, drizzle the fruit with the mint syrup and gently toss to coat.

This recipe came about after I made and reviewed Wite Shadow's mint and ginger syrup. I had bunches of mint to harvest so I created this very simple way to have it on hand throughout the winter. After the syrup has cooled pour into ice cube trays and freeze, then pop into freezer bags. One mint cube is perfect in tea, or in a salad dressing, a marinade, or in cocktails.

1 cup water
1 cup sugar
2 cups fresh mint leaves

Steps:

  • Bring the water to a boil, add the mint and the sugar.
  • Stir until all the sugar is melted and lower the heat to a slow simmer.
  • Continue stirring for one minute then remove from the heat and let steep for 30 minutes-1 hour.
  • Strain and pour into ice cube trays.
  • Freeze then pop the cubes into freezer bags and store until needed.

I’m sure that if it didn’t run amok in the garden in a rather annoying way, we would prize it more highly not just as a nice thing to chuck in with the potatoes, but as the wonderful sweet-scented herb that it is. This simple recipe is best made with young, bright green mint leaves picked just before flowering, when the volatile oils are at their strongest. Gather them on a sunny day, when the plant is fully dry and the leaves are warm. Use the leaves immediately after picking to retain every bit of their amazing warming and cooling menthol character. Mix 2 teaspoons of mint syrup into a glass of ice-cold water, lemonade, or tonic for a cooling summer drink. To make delicious hot, sweet mint tea, add 1 tablespoon of the syrup to a pot (silver, of course, if you have one) of steaming green tea.
