Traditional mint sauce. Serve with roast lamb or add to potatoes or salads.

1/2 cup fresh mint, finely chopped
1/3 cup boiling water
1 tablespoon caster sugar
1 tablespoon white wine vinegar

Steps:

  • Dissolve sugar in boiling water.
  • Add finely chopped mint and vinegar and stir to combine.
  • Allow to stand for one hour to let the flavour develop.
  • Store in a jar in the fridge for up to one week.

lime, cut into 4 wedges

1 tsp.

granulated sugar

2 oz.

white rum

Club soda, for serving

Lime slices and mint sprigs, for garnish

Steps:

  • Place the mint leaves, lime wedges, and sugar in a cocktail shaker and muddle for about 20 seconds.  Add the rum and ice cubes. Cover and shake well, about 10 seconds. Fill a tall glass one-third full of ice. Add the mojito mixture to the glass. Top with club soda and garnish with lime slices and mint sprigs.
