Steps:
- Preheat the oven to 375 degrees F.
- Remove the kernels from the ear of corn by slicing off the end of the ear to create a flat surface and then slicing down the cob from top to bottom. Put the kernels into a small bowl and set aside.
- In a large mixing bowl, add the corn muffin mix, egg and milk. Stir to combine (the batter will be lumpy). Add the corn kernels and Cheddar, stirring once again to fully incorporate. Allow the batter to sit for 3 to 4 minutes to activate the leavener.
- Grease a 24-cup mini muffin tin. Pour 1 tablespoon batter into each mini muffin cup. Place a single hot dog piece in the center of each cup standing straight up. Bake until cooked through, 12 to 14 minutes. Allow to rest in the pan before unmolding.
- Serve with various condiments, such as ketchup, mustard and relish.

- Preheat oven to 375 degrees. Spray mini muffin tins with non-stick cooking spray. Set aside.
- In a bowl whisk together dry ingredients.
- In another bowl, whisk together wet ingredients.
- Form a well in the center of the dry ingredients, and pour wet ingredients in the center. Whisk together until incorporated.
- Spoon one Tablespoon of batter into each of the muffin tins, and stand a hotdog piece on end in the center.
- Bake 8-10 minutes or until they are done.
- Eat immediately.

- Preheat oven to 425 degrees. Combine corn meal, flour, and salt in a mixing bowl. In a separate bowl, combine buttermilk, milk, and egg. Add baking powder and baking soda to the wet ingredients. Stir into the dry ingredients. Add ¼ cup melted shortening, slightly cooled, stirring constantly. Grease muffin tins (whatever size you want) and fill them a little more than half full with batter. Cut a hot dog into pieces (small rounds if using mini muffin tins; 1-inch slices if using larger muffin tins.Bake until cornbread is done, about 10 to 12 minutes. Remove from the pan and serve with ketchup and mustard!
