MIDDLE EASTERN PITA SANDWICH | SO DELICIOUS



Middle Eastern Pita Sandwich | So Delicious image

Are you in the mood for some Middle Eastern flavors? Here is a quick vegetarian snack, that will not hurt your diet. A veggie and couscous salad, with a touch of Feta cheese, and served in a tortilla. And, let's not forget the tzatziki sauce, which brings its deliciously fresh flavor right on the main stage.

Number Of Ingredients 20

For the tzatziki sauce: 3.5 ounces of Greek yogurt
1 small cucumber
1 small red onion, chopped
fresh mint
1 tablespoon fresh dill, chopped
1 tablespoon lemon juice
1 tablespoon olive oil
salt
pepper For the veggie salad: 3 ounces of couscous, cooked
1 spring onion, chopped
5 cherry tomatoes, chopped
1 small cucumber, diced
3 tablespoons of fresh parsley, chopped
fresh mint
1 tablespoon lemon juice
1 tablespoon olive oil
1 tortilla wrap
canned chickpeas (optional)
feta cheese (optional)
fresh dill (optional)

Steps:

  • Wash and shred the cucumber, then squeeze out the water from it.
  • Add the yogurt sauce, shredded cucumber, red onion, mint, and dill in a small bowl. Season with salt, pepper, and mix with a fork until you get a tzatziki sauce.
  • Add the cooked couscous into a separate bowl.
  • Add the spring onion, cherry tomatoes, and cucumber. Add parsley, mint, and drizzle with olive oil and lemon juice. Mix with a tablespoon.
  • Evenly spread the tzatziki sauce over the tortilla.
  • Top the tortilla with the couscous and veggie mixture. You can add some more veggies, chickpeas, feta cheese, and fresh dill.

This is one of my favorite "street foods" in the Middle East. It is originated in Egypt as a snack. Here is my version of felafel recipe...

Number Of Ingredients 18

1 c. chickpeas (canned)
1 clove garlic, minced
1 medium onion, finely chopped
1/2 tsp. salt
1/2 tsp. chili powder
1/2 tsp. cumin powder
1/2 tsp. coriander powder
1 tbsp. parsley or coriander leaves
1 large potato, boiled and mashed
all-purpose flour
oil for frying
Arabian flat bread
fried eggplants, chopped
french fries
boiled eggs, chopped
tomatoes, sliced
chopped parsley
hummus or mayonnaise

Steps:

  • Rinse chickpeas and remove skins. Grind chickpeas, garlic, onion, salt, chili, cumin, coriander and parsley in a food processor. Mix chickpea mixture and mashed potato in a bowl. Blend well. Take 2 tbsp. mixture and drop onto oiled tray. Repeat the process. Refrigerate at least 1 hour. Coat felafel with flour. Mold into a ball. Flatten slightly with palms. Deep fry until golden brown. Fill flat bread with felafel, eggplant, french fries, boiled egg, tomato, chopped parsley and hummus. Roll like a spring roll. Serve hot with ketchup.
