1 (15 ounce) package refrigerated pie crusts, at room temperature
1 lb ground beef
1 (4 ounce) can diced green chilies
1/4 cup water
1 (1 1/4 ounce) package taco seasoning mix
1 cup shredded mild cheddar cheese
1 (15 1/2 ounce) container salsa (I use mild)
salsa
shredded lettuce
sour cream
diced tomato
sliced green onion

Steps:

  • PREHEAT oven to 425°F.
  • BROWN beef in large skillet; drain.
  • Add chilies, water and seasoning mix; mix well PLACE unwrapped pie crusts on cutting board; unfold.
  • Cut each crust in half, making 4 half circles.
  • Place 1/2 cup beef filling on half of each half circle.
  • Place 1/4 cup cheese on top of each.
  • Dampen edge of crust with water.
  • Fold sides over filling; crimp edges with tines of fork.
  • Place on ungreased baking sheet.
  • BAKE for 10 to 15 minutes or until golden brown.
  • Cool on baking sheet for 5 minutes.
  • Garnish suggestions: salsa, shredded lettuce, sour cream, diced tomatoes, sliced green onions.

1 pound ground beef
½ teaspoon salt
1 medium onion, halved and sliced
1 large yellow or red bell pepper, sliced
1 (15-oz.) container low-fat ricotta cheese
2 large eggs
2 teaspoons salt-free Southwest chipotle seasoning
¾ teaspoon salt
2 (13.8-oz.) cans refrigerated pizza crust dough
½ cup pizza sauce*
1 (8-oz.) package shredded Mexican four-cheese blend

Steps:

  • Preheat oven to 425°. Sauté first 4 ingredients in a large nonstick skillet over medium-high heat 10 minutes or until meat crumbles and is no longer pink and vegetables are lightly browned. Remove from skillet, and drain well.
  • Stir together ricotta cheese, eggs, and seasoning.
  • Unroll 1 can of dough on a lightly greased baking sheet. Stretch dough into a 10- x 13-inch rectangle. Spoon 1/4 cup pizza sauce, 1 cup ricotta mixture, and half of ground beef mixture on half of rectangle, leaving a 1-inch border. Sprinkle with 1 cup cheese. Moisten edges with water; fold dough over, pressing and crimping edges to seal. Cut 3 (1-inch) slits on top of dough to allow steam to escape. Repeat procedure with remaining dough, pizza sauce, ricotta mixture, ground beef mixture, and cheese.
  • Bake at 425° for 24 to 26 minutes or until golden. Serve with additional warm pizza sauce, if desired.
  • *Marinara sauce may be substituted.
  • Note: For testing purposes only, we used Mrs. Dash Southwest Chipotle Seasoning Blend.

CALZONE | JUST A PINCH RECIPES
This recipe was in the recipe box belonging to my grandmother 'Mimi'. While it does seem to have a lot of ingredients, it really is not that hard to make and is well worth the effort. It surprised me to find this one because she normally made a lot of south western type recipes. That is until I got to the end and it had suggestions for making it with a southwestern flavor! I added that to the bottom of the recipe for you as well.
