Total Time 3 hours 0 minutes

Yield 48 dumplings

Number Of Ingredients 5

3 cups all-purpose flour
1 cup warm water (about 110°F)
1 tablespoon vegetable oil
1 recipe desired filling
1 recipe desired dipping sauce

Steps:

  • For dough*, place flour in a large bowl. Make a well in center; pour in warm water. Using a fork, stir just until a shaggy dough forms. Cover with plastic wrap. Let stand 15 minutes. Add oil. Mix until combined and dough forms a ball. Transfer to a lightly floured surface. Knead until soft and smooth, about 5 minutes, adding flour as needed to prevent sticking. Sprinkle lightly with flour; cover with plastic wrap. Let stand at room temperature 1 hour.
  • Meanwhile, prepare desired filling; chill. Line the bottom of a bamboo steamer basket with a piece of parchment cut to fit. Using a sharp knife, make several slits in paper; lightly coat with cooking spray.
  • Divide dough into four equal portions. Roll one portion of dough at a time into a 12-inch log (keep remaining dough covered with plastic wrap). Using a ruler as a guide, cut into 1-inch pieces. Press each piece into a circle, then roll to a 4-inch circle. Spoon 1 tablespoon filling in center. Working your way around the dumpling, pull the dough up over filling, creating pleats to enclose. Pinch dough at the top and twist.
  • Transfer to prepared steamer basket. Repeat with remaining dough and filling. (Fill and shape remaining batches of dumplings while the first batches steam.)
  • Set basket over a skillet of boiling water (not touching water). Cover; steam 10 minutes or until dumplings reach 165°F when an instant-read thermometer is inserted into filling. Serve with desired dipping sauce.

STEAMED PORK AND JÍCAMA DUMPLINGS RECIPE | EPICURIOUS

Steamed Pork and Jícama Dumplings Recipe | Epicurious image

Though these dumplings are traditionally cooked in stacked Asian bamboo or metal steamers, you can also use a pasta pot with a deep perforated colander-steamer insert. If your pot has a second shallow colander-steamer insert, you can steam 2 batches at once. The dumplings should be served warm, so reheat them in batches as platters need replenishing.

Provided by EPICURIOUS.COM

Total Time 1.75 hrs

Cook Time 1.5 hrs

Yield Makes about 60 hors d'oeuvres

Number Of Ingredients 17

1 large egg white
2 tablespoons minced peeled fresh ginger
1 tablespoon minced garlic
1 tablespoon peanut or vegetable oil
1 tablespoon Asian sesame oil
1 tablespoon soy sauce
1 tablespoon cornstarch
2 teaspoons sugar
1/2 teaspoon salt
1 cup diced (1/4 inch) peeled jicama
1/2 cup minced scallion
1 1/2 pound ground pork (not lean)
60 wonton wrappers (from two 12- to 14-ounce packages), thawed if frozen
2 tablespoons black sesame seeds, toasted
2 tablespoons white sesame seeds, toasted
Special equipment: a 2 1/2-inch round cookie cutter; a pasta pot with a deep perforated colander-steamer insert or a metal steamer
Accompaniment: soy dipping sauce

Steps:

  • Lightly whisk egg white in a large bowl, then whisk in ginger, garlic, peanut oil, sesame oil, soy sauce, cornstarch, sugar, and salt. Add jicama, scallion, and pork and mix together with your hands until combined well.
  • Separate wonton wrappers and restack in piles of 10. Cut through each stack with cookie cutter and discard trimmings. Arrange 6 rounds on a work surface (keep remaining rounds covered with plastic wrap) and mound a scant tablespoon filling in center of each. Lightly moisten edge of wrappers with a finger dipped in water. Working with 1 at a time and leaving dumpling on flat surface, gather edge of wrapper around side of filling, pleating wrapper to form a cup and pressing pleats against filling (leave dumpling open at top). Flatten filling flush with edge of wrapper with wet finger and transfer dumpling to a tray. Make more dumplings in same manner with remaining rounds and filling.
  • Generously oil bottom of colander-steamer insert and bring a few inches of water to a boil in pot so that bottom of insert sits above water. Arrange 10 dumplings, about 1/2 inch apart, in insert and steam over moderate heat, covered, until dough is translucent and filling is just cooked through, about 6 minutes.
  • Stir together black and white sesame seeds and sprinkle over dumplings. Serve immediately.
