Meatballs & tomato sauce | Jamie Oliver meatball recipes image

Number Of Ingredients 16

800 g quality lean meat for mincing, or bought minced meat
2 slices of bread
½ teaspoon cumin seeds
½ a small dried red chilli
1 sprig of fresh rosemary
2 level tablespoons dried oregano
1 large free-range egg yolk
olive oil
1 x Basic tomato sauce
2 handfuls of fresh basil
60 g mozzarella cheese
60 g Parmesan cheese
1 onion
1 clove of garlic
olive oil
1 level tablespoon Dijon mustard

Steps:

    1. If your meat is not already minced, whiz it up in a food processor to the required consistency and place it in a bowl.
    2. Use the food processor to turn the bread into breadcrumbs, then add to the meat.
    3. Bash up the cumin seeds and dried chilli in a pestle and mortar, and pick and finely chop the rosemary leaves. Add to the mince with the dried oregano and egg yolk. Season well with sea salt and black pepper.
    4. At this stage you could add your optional ingredients (peeling and finely chopping the onion and garlic first, then cooked together gently in 1 tablespoon of oil until tender and allowed to cool).
    5. Mix well, and, with wet hands, roll and pat into meatballs the size and shape you want (cook straight away or put on greaseproof paper and refrigerated for up to a day.)
    6. Preheat the oven to 200°C/400°F/gas 6 and heat a thick-bottomed casserole pan on the hob.
    7. Swirl 4 tablespoons of oil around the pan and add your meatballs. Fry until brown all over, being careful not to break them up.
    8. Turn the heat down and cover with the Basic tomato sauce, pick the basil leaves and tear in fresh basil, tear over the mozzarella and finely grate over the Parmesan.
    9. Cook in the oven for about 15 to 20 minutes, or until the cheese is golden.

1/4 C all-purpose flour
2 Tbls butter
1 C half & half
1 C Beef Broth ~ I love Better than Bullion ~ it’s deelish!
salt and pepper to taste
Optional ~ Sour Cream…this will make your Swedish Meatballs more like a Stroganoff.

Steps:

  • Optional ~ Sour Cream…this will make your Swedish Meatballs more like a Stroganoff.
  • In skillet, stir flour and butter over medium heat until browned. Slowly whisk in Half & Half and Broth salt and pepper.
  • Bring to a boil. Cook, stirring until thickened and smooth. if gravy has lumps you can pour through a strainer. Add meatballs to sauce and heat to serving temp. or cool and reheat later. Psst….can be frozen for later too! Serve over noodles or rice. Makes 6 – 8 servings.

  • To make the meatballs: combine the meat, eggs, breadcrumbs, parmesan, garlic, parsley, salt, pepper and a splash of milk in a mixing bowl. Mix together well, using your hands. Roll into 25 1½-inch balls and place on a cookie sheet. Place the cookie sheet into the freezer for 5 to 10 minutes to firm up. To brown the meatballs, heat the olive oil in a heavy pot or large skillet over medium-high heat. Add the meatballs, about eight at a time, turning to brown on all sides (they’ll finish cooking in the sauce later). Remove and drain on a paper towel-lined plate after each batch. Set meatballs aside. To make the sauce: in the same pot, add the onions and garlic and cook for a few minutes, or until translucent. Pour in crushed tomatoes, whole tomatoes with their juices and wine, if using. Add the red pepper flakes (as desired), parsley, salt, pepper and sugar. Stir to combine and cook over medium heat for 20 minutes. Add the meatballs to the pot and stir gently into the sauce. Reduce the heat to a simmer and cook for 30 minutes, stirring very gently a couple of times. Just before serving, stir in the basil, if using. Serve over cooked spaghetti and sprinkle with extra parmesan.

    In a large pot over medium heat, heat oil. Add meatballs and cook, turning occasionally, until browned on all sides, about 10 minutes. Transfer meatballs to a plate. Add onion to pot and cook until soft, 5 minutes. Add crushed tomatoes and bay leaf. Season with salt and pepper and bring to a simmer. Return meatballs to pot and cover. Simmer until sauce has thickened, 8 to 10 minutes. Serve pasta with a healthy scoop of meatballs and sauce. Top with Parmesan before serving.
