Mary's Caesar Salad Recipe: How to Make It image

Whenever I entertain, this appears on my table...it never fails to win me rave reviews. Most folks seem to prefer this sweeter version to traditional Caesar salad.

Number Of Ingredients 15

1 hard-boiled large egg
2 to 4 tablespoons mayonnaise
2 tablespoons lemon juice
1 garlic clove, minced
3 tablespoons red wine vinegar
1 to 3 teaspoons sugar
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon ground mustard
1/4 teaspoon pepper
1/2 cup olive oil
1 large bunch romaine, torn
3/4 cup Caesar-flavored salad croutons
1/4 cup grated Parmesan cheese
1 can (2 ounces) anchovy fillets, optional

Steps:

  • Place the first 10 ingredients in a blender or food processor; process until egg is chopped. Add oil and blend until smooth. , In a large bowl, toss romaine, croutons and Parmesan cheese. Add dressing; toss to coat. Top with anchovies if desired.

This salad is a must have at all of our holiday gatherings. The whole family rates layered salad as their favorite dish on the holidays! Enjoy!

Number Of Ingredients 7

1 pound bacon
1 head iceberg lettuce - rinsed, dried, and chopped
1 onion, chopped
1 head cauliflower, chopped
16 ounces shredded sharp Cheddar cheese
1 (32 ounce) jar mayonnaise
1 (16 ounce) package frozen green peas

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • In a large serving bowl place a thin layer of 1/2 of the listed ingredients. Begin with the lettuce followed by onion, cauliflower, cheese, bacon and peas. Repeat.
  • Top the salad with mayonnaise and garnish with a sprinkle of crumbled bacon.

    Combine the dressing ingredients in a jug or bowl, then season and mix well. Pour the dressing over the salad, toss together and then mix in the herbs to serve.

    If the salad is still warm, set aside until cold before adding the herbs (see note).

    Cook’s Notes:
    • Cook the bulgur wheat and quinoa in the same pan to save on washing up – just add the one that needs less time after starting to cook the first.
    • If you add the herbs while the grains are still warm, they may lose their bright green colour.

    Prepare Ahead:
    Can be made up to 8 hours ahead; add the dressing up to 2 hours before serving.
