1 1/2 pounds fresh mahi mahi or snapper, diced  
1/4 cup cider vinegar 
2 tablespoons hot sauce
2 tablespoons olive oil 
Juice of 3 lemons
3 bell peppers, roughly chopped into 1/4-inch pieces
Juice of 2 limes
1 red onion, thinly sliced
1/2 bunch fresh cilantro, finely chopped
Cayenne pepper
Salt and freshly ground black pepper 
Salt and freshly ground black pepper
1 bag corn tortilla chips

Steps:

  • Mix together the mahi mahi, vinegar, hot sauce, olive oil, lemon juice, bell peppers, lime juice, onions, cilantro and cayenne and salt and black pepper to taste. Let chill for at least 2 hours and up to 10 hours.
  • Serve with the corn tortilla chips.

1/2 bunch cilantro fresh chopped
1 lb Mahi mahi small dice
2 tb Kosher salt
3 tomato small dice
1/2 c Fresh lime juice

  • 1. Boil the yams for 5 minutes. Drain, allow to cool and set aside. 2. Steam corn kernels. Set aside. 3. In the blender, puree the lime juice, clam juice, celery, 2 tablespoons red onion (chopped), ginger, garlic, 4 tablespoons of the cilantro, 1 ½ teaspoons salt, and ½ cup of the fish. 4. Strain the pureed mixture to remove excess juice. Retain the puree in a large bowl. 5. Add the remaining fish, cilantro, and salt, as well as the chiles and red onion. Stir to coat. 6. Cover the bowl with plastic wrap. Marinate, refrigerated, for two hours, stirring occasionally. 7. Serve chilled with the yams and corn.
