Mac and Cheese Base | Better Homes & Gardens image

This recipe serves as the base sauce for all of the Mac and Cheese recipes at Homeroom. To avoid burning or clumping, use a high-quality, thick-walled saucepan. This recipe is a great base for anything you can dream up, so feel free to add your favorite vegetables, meats, or spices to create your own unique dish.

Yield 2 1/2 cups base.

Number Of Ingredients 4

2?½ cups whole milk
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
¼ teaspoon salt

Steps:

  • In a heavy medium saucepan heat milk over medium heat until heated through but not boiling; reduce heat to low and keep warm.
  • In another medium saucepan heat butter over medium-low heat until melted. Whisk in flour. Cook and whisk constantly for 3 minutes.
  • Remove the butter/flour mixture from the heat. Stir in salt. Slowly and carefully whisk in the warm milk about 1/2 cup at a time.*
  • When the sauce is no longer thickening (after adding about 1 1/2 to 2 cups milk), place saucepan over medium heat.
  • Continue adding warm milk, 1/2 cup at a time. For a thicker sauce, do not add all of the 2 1/2 cups milk. For a thinner sauce, add all of the milk. Continue to heat and whisk for 5 to 10 minutes or until the sauce is the desired consistency. (Sauce will thicken more when cheese is added.)

1 lb elbow macaroni
2 tablespoons butter
2 tablespoons flour
2 cups milk, warmed
1 -2 lb sharp cheddar cheese

Steps:

  • Boil and drain macaroni per box instructions.
  • Melt the butter in a skillet.
  • Sprinkle in flour and stir until pasty.
  • Whisk in warmed milk and let cook until thickened.
  • Add cheese to sauce.
  • Add sauce to pasta.

  • "Cook the macaroni in boiling water for about 10 minutes until tender but still firm. Drain well and set aside. In a deep skillet, melt the butter over medium heat. Add the flour to make a roux and cook, stirring, to remove any lumps. Pour in the milk and cook until the mixture is thick and smooth. Season with salt and pepper. Stir in 2 cups Cheddar and continue to cook until melted. Add the cooked macaroni and stir. Transfer the mixture to a 2-quart casserole dish. Bake in a preheated 350-degree F oven for 20 minutes. Remove the casserole from oven, top with remaining 1/2-cup cheese. Bake for an additional 5 minutes until hot and bubbly. "
