SESAME BALLS - JIAN DUI RECIPE | SIDECHEF
Also known as Ma Tuan, these are fried sesame balls made with glutinous rice flour and filled with red bean paste. The Sesame Balls is a staple breakfast food as well as a favorite past time for most Chinese.

Steps:
- In a small bowl, mix 2 tablespoon of the Sweet Glutinous Rice Flour (1 1/2 cup) with around 10 ml of Water (to taste). Knead until smooth.
- Bring some water to boil and then cook the small dough for around 2-3 minutes. Prepare a bowl with cold water on the side. When the small dough is cooked, transfer it out with soak with cold water to cool down.
- In a large bowl, mix the remaining glutinous rice flour with Granulated Sugar (80 gram) and Baking Powder (1/2 teaspoon). Add in the small dough. Slowly stir in Water (to taste) and continue kneading until smooth.
- Further shape the dough into long log and then divide into 20 equal portions. Shape each portion into a round ball. Then, shape each round ball into bowls, and wrap around 1 teaspoon of the Red Bean Paste (60 gram) in. Seal completely and shape into balls again.
- Prepare two bowls, one with Water (100 milliliter) and the other with Roasted White Sesame Seeds (1 cup). Take one ball with one hand and quickly dip the balls in water and then roll the balls the sesame bowl with the other hand.
- Press the balls several times to make sure the sesame seeds stick to the surface. Repeat to finish all the sesame balls.
- In a large pot, heat enough Canola Oil (to taste) until 120 degrees C (50 degrees F). Carefully add in the sesame balls, lower the heat immediately to slowly deep-fry the balls until slightly golden brown. Transfer out and absorb extra oil with kitchen napkins. Let cool and enjoy!

- Preheat oven to 350 degrees F (175 degrees C).
- Bring water to boil in a saucepan. Cook macaroni at a boil, stirring occasionally, until tender, 7 to 8 minutes; drain.
- Return macaroni to the saucepan. Stir cheese sauce mixture from the packet, margarine, and milk into the macaroni until the margarine melts and the macaroni is evenly coated in sauce. Add tuna and mushrooms; stir. Pour macaroni mixture into a small casserole dish; top with bread crumbs.
- Bake in preheated oven until hot, about 30 minutes.

- Make the filling: In a small food processor, add sugar, sesame or peanuts, and salt and pulse until mixture resembles coarse sand. Add in oil and water and continue blending until fully combined and smooth. Transfer to a bowl and freeze for 30 minutes to 1 hour. Scoop and portion chilled filling into 24 balls, about ½ tablespoon each. Transfer to a plate and freeze until completely hardened, about 2 hours. Meanwhile, make dough: In a large bowl, whisk together rice flour and salt. Drizzle in condensed milk and boiling water, then stir to evenly distribute. Drizzle in room-temperature water and stir until fully combined. Knead until dough is smooth and pulls away from the bowl. Cover and let rest for 30 minutes. On a clean surface lightly dusted with more rice flour, roll dough out into a long rope. Cut rope into 24 equal pieces, then flatten each piece into a 2”-wide round. Place a ball of filling in the middle of each round, then gently guide and coax the wrapper to fully seal the filling inside the dough. In a medium pot of boiling water over medium-low heat, add tang yuan in batches, making sure not to overcrowd the pot. Boil until the tang yuan floats, stirring occasionally, about 6 minutes. Continue cooking for 1 minute more, then transfer to a bowl to serve. Serve tang yuan hot, with a few ladles of cooking broth in each bowl.
