16 ounces potatoes, shredded (frozen works well)
3 green onions, chopped
4 ounces cheddar cheese, shredded

Steps:

  • In cast iron skillet, cook bacon until crispy. Set aside to cool, do not drain bacon fat.
  • Spread potatoes evenly in skillet. Cook potatoes and green onions in bacon fat. Do not stir, let brown on one side before flipping over and browning on other.
  • Crumble bacon over top of potatoes. Sprinkle cheese on top. Place under broiler until cheese melts.

6 slices bacon, or to taste
cooking spray
1 cup sour cream
½ cup butter
1 pinch salt-free seasoning blend, or to taste
8 frozen hash browns, thawed, or more to taste
¾ cup shredded Cheddar cheese, or to taste
1 tablespoon dried chives, or more to taste
ground black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and break into small pieces.
  • Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x4-inch loaf pan with cooking spray.
  • Mix sour cream, butter, and seasoning blend together in a bowl. Layer 2 1/2 hash browns in the prepared dish. Spread 1/3 of the sour cream mixture over hash browns. Sprinkle 1/4 cup Cheddar cheese and 1/3 of the bacon on top. Repeat layers twice more. Sprinkle chives and pepper over casserole. Cover with aluminum foil.
  • Bake in the preheated oven until cheese is golden brown and casserole is heated through, about 1 hour.

  • 1. Preheat oven to 400° Line a baking sheet with parchment paper and bake bacon for 15-18 minutes, until crispy. Remove and set aside to cool slightly. When cool enough to handle, cut into ½ inch pieces. 2. Fill a medium bowl with cold water. Peel potatoes and grate on a box grater, using the side with large holes. Immediately drop grated potatoes into the water. Drain into a fine mesh colander and rinse until water runs clear. (Two or three times) 3. Place drained potatoes into a clean kitchen towel and twist to wring out as much excess water as possible. 4. Add 2 tablespoons of butter to a cast iron skillet and sauté the onions and peppers over medium heat until soft, about 5 minutes. Remove from pan and set aside. 5. Add remaining butter to pan. Increase heat to medium high. When butter has melted, add potatoes to pan and let them cook, undisturbed, for 5 minutes. Season with salt and pepper. 6. Using a heat proof spatula, break up the potatoes and flip over to brown evenly. Continue cooking for 10 minutes, breaking up potatoes and moving them around to cook thoroughly. Reduce heat to medium if potatoes get too brown. 7. Add peppers, onions, bacon, cheese and chives, if using. Once cheese has melted, remove from heat and serve.
