Salmon Patties Recipe : Taste of Southern image

Southern Fried Salmon Patties: This is fish even the kids will enjoy eating. Simple, quick, easy to make, and tastes even better between two slices of bread or in a bun. Add a little mayo or whip up your own special sauce and you've got supper on the table in no time flat.

Number Of Ingredients 13

1 – 12oz. can of Pink Salmon
2 – whole Eggs
1/4 – cup of chopped Onions
1/4 – cup of chopped Bell Pepper
2 – Tablespoons of Yellow Corn Meal
1/2 – teaspoon Salt
1/2 – teaspoon Garlic Powder
2 – Tablespoons of Mayonnaise
1 – teaspoon of Worcestershire Sauce
1 – teaspoon of Texas Pete Hot Sauce
1/2 – teaspoon of Ground Black Pepper
1 – slice of crumbled up White Bread
1/4 – cup of Flour, added slowly, as needed to adjust consistency.

Steps:

  • Open the canned Salmon and place in a colander in the sink to drain.
  • Remove any large bones if not wanted. They are edible however.
  • Flake the salmon with a fork.
  • Place the flaked salmon in a large mixing bowl.
  • Add two whole Eggs
  • Add the chopped Onions and the chopped Bell Peppers
  • Add the Corn Meal
  • Add Salt
  • Add Garlic Powder
  • Add Mayonnaise
  • Add Worcestershire Sauce
  • Add Texas Pete Hot Sauce
  • Add Ground Black Pepper
  • Crumble the slice of bread and toss it in the bowl.
  • Gently mix the ingredients together, don’t over work.
  • If the mixture is very moist, add flour as needed to adjust consistency.
  • Divide and shape the mixture into four patties. Set aside.
  • Heat a skillet to medium heat and add shortening or oil for frying.
  • Place the patties in the skillet, brown the bottom.
  • Carefully turn the patties over and brown the other side.
  • When brown on both sides, remove from skillet and drain on paper towel.
  • Serve while warm and Enjoy!

14 ounces pink salmon (skinless and boneless)
1/2 cup Italian seasoned breadcrumbs
1 teaspoon seasoning (Everglades seasoning)
1 teaspoon parsley
1/2 tablespoon lemon juice
1 egg
1/4 cup mayonnaise
1 tablespoon oil (your prefered brand and taste)

Steps:

  • Mix Salmon, bread crumbs, everglades, parsley, lemon juice, mayo, oil and egg in bowl.
  • Form into patties of desired size.
  • lightly oil or grease pan and fry on medium to desire on each side (4 to 7 min) or you can grill if you prefer.
  • Sprinkle with black pepper if desired and serve with dipping sauce of your choice.

I learned to make these by watching my Aunt Helen as a child. I have made them throughout my 33 yrs of marriage. My husband and children love them. My 32 yr. old son recently asked me for the recipe. I searched the internet for a recipe that was closest as I did not have a recipe written down. This is the closest to the way I learned. I use the boneless/skinless cans though, as I don't like to pick the skin and bones out. I also add shredded cheddar or cheddar jack cheese to mine. This is a southern recipe that all of my family from the south make and love.

Put salmon in a large bowl and add eggs, onion, cheddar cheese, breadcrumbs and salt and pepper. 3. Mix together until well blended and form into patties. I usually get 8 or 9 out of 2 cans of salmon. 4. Pour oil into skillet and heat on medium-high heat. I always use my cast iron skillet, but you can also use a non-stick skillet. 5. Place patties in pan and fry about 3-5 minutes on each side, until well browned and crisp. 6. Drain on paper towel lined plate for a few minutes before serving. 7. Serve with ketchup or tartar sauce. (My son used to smother his with ketchup and my husband used to ask him if he wanted a little bit of salmon patties with his ketchup).
