Having a ton of people over? There's nothing easier than a shrimp boil. All you have to do is load up a pot of boiling water with spices, shrimp, corn, and potatoes. Here's how it's done.

Number Of Ingredients 7

2 pounds small red-skinned potatoes
¼ cup Zatarain’s Crawfish, Shrimp & Crab Boil or Old Bay Seasoning, plus more for serving
Kosher salt
2 lemons, divided
4 ears of corn, husked, each ear cut crosswise into quarters
2 pounds shell-on large shrimp, cut along back of shell, deveined
Olive oil (for drizzling)

Steps:

  • Combine potatoes, ¼ cup Zatarain’s, several large pinches of salt, and 5 quarts water in a large stockpot. Cut 1 lemon in half crosswise and squeeze juice into pot, then toss in halves. Bring to a boil, reduce heat, and simmer, uncovered, until potatoes are fork-tender, 20–25 minutes.
  • Add corn to pot; increase heat to high and bring liquid back to a boil. Add shrimp, cover pot, and turn off heat. Poach shrimp until just cooked through, about 2 minutes. Immediately pour entire contents of pot into a large colander to drain, then spread out corn, potatoes, and shrimp on a large rimmed baking sheet or sheets of newspaper; discard lemon halves. Sprinkle with more Zatarain’s and drizzle with oil. Cut remaining lemon into wedges and serve alongside for squeezing over.

Every year in May we have a big Shrimp Boil. I got this recipe from Old Bay and we love it. Roll up your sleeves and dig in.

Number Of Ingredients 9

1/2 cup Old Bay Seasoning
2 tablespoons salt
4 quarts water
1 (12 ounce) can beer
8 medium red potatoes, cut in quarters
2 large vidalia onions, cut in wedges
2 lbs smoked sausage, cut in 2 inch lengths
8 ears frozen corn on the cob, thawed (I use Birdseye Little Ears)
4 lbs large shrimp, in shells

Steps:

  • In an 8-quart stock pot, bring Old Bay, salt, water and beer to a boil.
  • Add potatoes and onions; cook over high heat for 8 minutes.
  • Add smoked sausage; continue to cook on high for 5 minutes.
  • Add corn to pot; continue to boil for 7 minutes.
  • Add shrimp in shells, cook for 4 minutes.
  • Drain cookin liquid; pour contents of pot into several large bowl or shallow pails.
  • Sprinkle with additional Old Bay.
