These lemon blueberry waffles are so fresh, bright and fluffy for brunch with the big bursts of juicy blueberries. The lemon curd tops them perfectly!

Number Of Ingredients 9

1 1/2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1 pinch salt
2 whole lemons (zested and juiced)
1 1/2 cups buttermilk
4 whole eggs
1 cup fresh blueberries (plus additional for topping)
1 cup lemon curd (for topping (either jarred or homemade))

Steps:

  • Pre-heat your waffle maker to get it ready. Then whisk the flour, sugar, baking powder and salt together in a large mixing bowl. Pour in the lemon zest, lemon juice, buttermilk, and eggs and whisk everything together thoroughly until it is a smooth batter. Switch to a spatula to fold in the blueberries. Scoop 1/4 of the batter into the waffle maker and ensure it is evenly spread out. Cook the batter for about 5 minutes, until puffy and golden. Serve it immediately with a 1/4 cup of the lemon curd on top and extra blueberries. Repeat this with the remaining batter to get 4 total. Enjoy!!

A sweet berry mixture tops these ricotta cheese-flavored waffles.

Yield Serves 6 (serving size: 1 waffle and 2 tablespoons sauce)

Number Of Ingredients 15

1?¾ cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
¼ teaspoon salt
1 cup 1% low-fat milk
½ cup part-skim ricotta cheese
2 tablespoons butter, melted
2 tablespoons canola oil
1 tablespoon grated lemon rind
1 tablespoon fresh lemon juice
1 large egg
Cooking spray
1 cup blueberries
2 tablespoons sugar
1 teaspoon fresh lemon juice

Steps:

  • Combine flour, 2 tablespoons sugar, baking powder, and salt in a bowl, stirring with a whisk. In a separate bowl, combine milk, ricotta cheese, melted butter, canola oil, lemon rind, 1 tablespoon fresh lemon juice, and egg. Add milk mixture to flour mixture, stirring. Coat a waffle iron with cooking spray. Spoon 1/3 cup batter per 4-inch waffle onto waffle iron. Cook 5 minutes; repeat with remaining batter. Combine blueberries, 2 tablespoons sugar, and 1 teaspoon fresh lemon juice in a saucepan; bring to a boil. Mash mixture with a fork. Simmer 3 minutes. Remove from heat; serve waffles with berry sauce.
