1 can (15 oz each) OR 1 carton (14.8 oz) Hunt's® Tomato Sauce
2 teaspoons caldo con sabor de pollo (chicken bouillon)
1-1/2 pounds boneless skinless chicken thighs
1 pound small red-skinned potatoes, quartered
2 cups baby carrots
1 cup chopped green bell pepper
2 tablespoons chopped garlic
1/4 teaspoon ground black pepper

Steps:

  • Spray inside of 4-quart slow cooker with cooking spray. Stir together tomato sauce and bouillon in slow cooker. Add remaining ingredients, except black pepper; stir to combine.
  • Cover; cook on LOW 8 hours or on HIGH 4 hours or until chicken and vegetables are tender. Sprinkle with black pepper; stir before serving.

This is really easy and turns out delicious every time! Great in tacos and salads. It's now one of my boyfriend's favorite chicken recipes. I usually double or triple the recipe so it makes enough meals for the week.

½ cup tomato salsa
½ cup chipotle salsa
½ cup pineapple preserves
1 pound skinless, boneless chicken

Steps:

  • Stir tomato salsa, chipotle salsa, and pineapple preserves in crock of a slow cooker. Add chicken and turn to coat in salsa mixture.
  • Cook on Low until chicken is tender and easily shredded, 3 to 4 hours.
  • Remove chicken to a cutting board; shred with 2 forks.
  • Return shredded chicken to salsa mixture, stir, and continue cooking for 1 hour more.
