25 cl Lait entier
50 g Sucre
1 sachet Levure de boulanger
250 g Farine de blé
50 g Farine de riz
50 g Fécule de maïs
50 g Beurre fondu
2 Saucisse chinoise lap xuong (ou saucisse cantonaise)
15 g Champignon noir séché
1 gousse Ail
2 Échalote
3 Oeufs durs
300 g Porc haché
1 c. à soupe Nuoc-mâm
1 c. à café Sucre
Sel et poivre

Steps:

  • La pâte des Banh Bao : commencez votre recette en faisant tiédir le lait. Versez-le dans un grand bol et ajoutez-y 1 c. à café de sucre et la levure en mélangeant. Ajoutez ensuite les farines et la fécule avant de laisser reposer 30 minutes. Ajoutez le beurre et mélangez afin d’obtenir une pâte homogène. Couvrez et laissez reposer  de nouveau, pendant 2 heures.
  • Recette de la farce : piquez les saucisses avec une fourchette, plongez-les dans une casserole remplie d’eau froide, portez à ébullition et laissez cuire pendant 2 minutes avant de les égoutter.
  • Faites tremper les champignons 30 minutes dans de l’eau chaude.
  • Hachez les champignons réhydratés, l’ail, et les échalotes. Coupez les œufs en quatre et les saucisses en tranches. Mélangez avec tous les autres ingrédients de la farce, assaisonnez, et réservez au frigidaire.
  • Divisez la pâte à brioche en 12 petites boules.
  • Étalez ces petites boules sur le plan de travail à l’aide d’un rouleau à pâtisserie en disques d’environ 15 centimètres de diamètre.
  • Le montage de vos banh Bao : Répartissez une bonne cuillère de farce ou une boulette de farce et un peu d’œufs durs au centre du disque de pâte. Remontez la pâte vers le centre du disque, pour enfermer la farce, en pinçant la pâte et en tournant légèrement autour de la brioche pour réunir tous les bords en pointe. La brioche doit être ronde et légèrement froncée.
  • La cuisson : placez vos brioches vietnamiennes sur de petits carrés de papier sulfurisé, puis dans un panier vapeur lui-même déposé au-dessus d’un bain d’eau bouillante, et laissez cuire 25 minutes.
