- Combine 1 pound shredded Extra Melt Cheese and water. Heat to melt cheese completely. Hold hot in Bain Marie. Fry 12 ounces French fries according to package instructions; drain. Immediately sprinkle lightly with seasoning salt. Place seasoned fries into serving dish. Top with 5 ounces cheese sauce, 2 tablespoons bacon, 1 tablespoon green onion and 1 ounce shredded cheese. Serve immediately.

I hope you like it. It tastes to me exactly like my local mexican restaurants white cheese. Please know that this cheese costs $9.00 a lb. so it is pricey. I get it on sale for $7.99 lb. You get the land-o-lakes cheese at the Deli counter where you get your sliced sandwich meats sliced for you. Walmart and Giant Eagle have it. It comes in a long large block. Buy the block. I tried the it sliced and it does not work well. Also, must be the hot pepper block not the american cheese not the same… Note the small specs of green and red in the cheese this is what caught my eye.

- Cut the cheese (LOL!) in to small chunks and put in a glass microwaveable bowl in the microwave. Start to melt on high using a fork to mix, until it starts to get creamy. Next I add the juice from the jar of sliced jalapeños and milk.. one Tablespoon each at a time. Mix it in and keep adding both and microwaving until it gets to where you want it taste wise and in creaminess. I will finely chop one jalapeño from the jar and mix it into the dip before I serve it with nachos. If it starts to thicken just microwave for a few seconds.
