Slow-roasted lamb | Jamie Oliver recipes image

Boning, stuffing and rolling the lamb means the flavourful filling infiltrates the meat as it cooks and vice versa. By stuffing the shoulder, you’re able to stretch the meat even further, and by removing the bones, the lamb is easier to carve – it’s a one-slice wonder!

olive oil
5 higher-welfare merguez sausages (250g total)
1 bunch of sage (20g)
2 small bulbs of fennel
2 red onions
250 ml white wine
250 g sourdough bread
3 kg higher-welfare lamb shoulder bone in (see tip below)
1 bulb of garlic
2 heaped tablespoons plain flour
1 tablespoon blackberry or blackcurrant jam
red wine vinegar
Green sauce to serve (optional)

Steps:

  • This recipe works great as a stand-alone dish, but also as a component in Jamie’s Summery Feast from Together – see the full collection of menus here. GET AHEAD For the stuffing, put a high-sided roasting tray (25cm x 30cm) on a medium-high heat with 2 tablespoons of olive oil. Squeeze the sausagemeat out of the skins straight into the pan, breaking it up with the back of a spoon. Let the sausage start to crisp up, stirring occasionally, then tear in the sage leaves. Trim the fennel, peel the onions, then roughly chop both, add to the tray, and cook on a medium heat for 20 minutes, or until soft and caramelized, stirring occasionally. Pour in the wine and let it completely cook away, then season to perfection, tasting and tweaking. Chop the bread into 2cm chunks and stir in, then turn the heat off and leave to cool completely. Lay out the lamb on a clean work surface. Scrunch and spread the cold stuffing all over the meat, then roll it up, sealing the filling inside (if any falls out, just poke it back in at the ends once tied up). Cut yourself eight 60cm lengths of string, slide them underneath the lamb at regular intervals, then tie them up at the top. Wipe out the tray, chuck in the lamb bones, break apart and add the unpeeled garlic bulb, then sit the lamb on top. Cover and refrigerate overnight. ON THE DAY Preheat the oven to full whack (240°C/475°F/gas 9). Get the lamb tray out of the fridge, rub the meat with a little olive oil, place in the oven, and turn the temperature down to 150ºC. Roast for 4 hours, or until tender, basting every hour with the tray juices and adding a splash of water each time. Remove from the oven and transfer the lamb to a serving platter. Cover with tin foil and a clean tea towel, and leave to rest for 1 hour. Use a spoon to skim the fat off the tray of bones (save it in a jar for tasty cooking another day). Put the tray over a medium heat on the hob and stir in the flour, jam and a swig of red wine vinegar, scraping up all the sticky bits from the base of the tray. Cook for a couple of minutes, then pour in 1.2 litres of water. Let it simmer on a low heat to the consistency of your liking, stirring occasionally. Pass the gravy through a sieve into a pan and season to perfection, tasting and tweaking. Simmer on the lowest heat until needed. TO SERVE Uncover the lamb, spooning any resting juices into the gravy. Cut away the string, then spoon over the Green sauce. Take it to the table, ready to carve in front of your guests.

6 lamb chops French-trimmed (600g in total)
200 g mixed-colour baby heritage carrots
8 cloves of garlic
3 oranges
½ a bunch of fresh thyme (15g)

Steps:

    1. Score the fat of the lamb chops, season them with sea salt and black pepper, then line them up, like a rack, and sit them together fat edges down in a large shallow casserole pan on a medium-high heat. Leave for 5 minutes to render and crisp up.
    2. Trim and add the whole baby carrots (halving any larger ones) and the unpeeled garlic cloves alongside, turning the carrots regularly.
    3. Gently turn the chops on to their sides, to cook for 2 minutes on each side, or until golden, but still pink in the middle.
    4. Meanwhile, use a speed-peeler to peel strips of zest from 1 orange. Sprinkle them into the pan with the thyme sprigs, and toss it all together for just 30 seconds to get the flavours going.
    5. Remove the chops to a plate to rest, then squeeze the juice from all 3 oranges into the pan. Let the juice bubble and reduce until sticky, quickly toss the lamb back in with its resting juices, then hey presto, time to dish up.

    1. Get your meat out of the fridge and up to room temperature before you cook it. Preheat the oven to 180ºC/350ºF/gas 4.
    2. Drizzle the lamb racks with olive oil and sprinkle generously with sea salt and black pepper, patting the seasoning all over the meat.
    3. Sear in a hot frying pan on a high heat with a little extra oil and 1 knob of butter for 2 to 3 minutes, turning with tongs until golden all over, then remove the racks to a roasting tray and let them cool.
    4. Peel 2 cloves of garlic and place in a food processor with the pistachios and parsley (stalks and all). Tear in the bread, finely grate in half the nutmeg and blitz into a fine green crumb.
    5. Generously brush each lamb rack with mustard, then cover with the herby crumb, patting it all over the top and sides.
    6. Roast for 25 minutes, until the crust is crisp, to give you beautifully blushing lamb. Remove from the oven and leave the lamb to rest for 10 minutes.
    7. Meanwhile, trim just the stalk ends off the green beans and cook for 6 to 7 minutes in a pan of boiling salted water.
    8. Crush the remaining unpeeled clove of garlic through a garlic crusher into a jar and mix with 1 teaspoon of mustard, the vinegar, 2 tablespoons of extra virgin olive oil and the lemon juice, then taste and season to perfection.
    9. Finely chop and add the tarragon leaves. Drain the beans and toss with the dressing. Carve up the lamb and serve with the dressed green beans and my potato al forno.

    1. Remove the lamb from the fridge 1 hour before you want to cook it, to let it come up to room temperature.
    2. Preheat the oven to 200ºC/400ºF/gas 6 and place a roasting dish for the potatoes on the bottom.
    3. Break the garlic bulb up into cloves, then peel 3, leaving the rest whole. Pick and roughly chop half the rosemary leaves. Peel and halve the potatoes.
    4. Crush the peeled garlic into a bowl, add the chopped rosemary, finely grate in the lemon zest and drizzle in a good lug of oil, then mix together.
    5. Season the lamb with sea salt and black pepper, then drizzle with the marinade and rub all over the meat. Place on the hot bars of the oven above the tray.
    6. Parboil the potatoes in a pan of boiling salted water for 10 minutes, then drain and allow to steam dry. Gently toss the potatoes in the colander to scuff up the edges, then tip back into the pan.
    7. Add the remaining rosemary sprigs and whole garlic cloves to the potatoes, season with salt and pepper, then drizzle over a good lug of oil. Tip the potatoes into the hot tray and place back under the lamb to catch all the lovely juices.
    8. Cook the lamb for 1 hour 15 minutes if you want it pink, or 1 hour 30 minutes if you like it more well done.
    9. Meanwhile, make the mint sauce. Pick and finely chop the mint leaves, then place in a small bowl. Mix in the sugar, a good pinch of salt, 1 tablespoon of hot water and the vinegar.
    10. When the lamb is cooked to your liking, remove from the oven and leave to rest for 15 minutes or so. Carve and serve with the roast potatoes, mint sauce and some seasonal greens.
