This recipe came from a Kraft newsletter. It's very simple, takes the 'blue box' of mac and cheese and adds just a few ingredients and steps to make it taste a bit more homemade. Note that this calls for the "dinner" Kraft mac n cheese, which is the one with the packet of cheese that you squeeze out, not the standard one with the powdered cheese. If you have to use the standard variety, use 2 boxes and add more milk or sour cream, as it tends to dry out during baking.

Number Of Ingredients 6

1 (14 ounce) package Kraft macaroni and cheese (dinner, blue box)
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 teaspoon ground red pepper or 1/4 teaspoon black pepper
6 butter flavored crackers, crushed (like Ritz)
1 tablespoon butter or 1 tablespoon margarine, melted

Steps:

  • Preheat oven to 375°F.
  • Prepare Mac n Cheese dinner as directed on package.
  • Stir in 1/2 cup of the Cheddar cheese, the sour cream and pepper.
  • Spoon into greased 1-1/2 quart baking dish; sprinkle with remaining 1/2 cup Cheddar cheese.
  • Combine the melted butter and cracker crumbs and sprinkle over the top.
  • Bake at 375 for 20 minutes. Let stand 5 minutes before serving.

1 package (16 ounces) elbow macaroni
1/4 cup butter
2 garlic cloves, minced
1/4 cup all-purpose flour
1 tablespoon ground mustard
1 teaspoon salt
3/4 teaspoon pepper
2-1/2 cups 2% milk
3/4 cup amber beer
1/4 cup heavy whipping cream
3 cups shredded cheddar cheese, divided
2 cups shredded fontina cheese
2 tablespoons grated Parmesan cheese, divided
2 tablespoons minced chives
5 bacon strips, cooked and crumbled

Steps:

  • Cook macaroni according to package directions for al dente. , Meanwhile, in a Dutch oven, heat butter over medium-high heat. Add garlic; cook and stir for 1 minute. Stir in the flour, mustard, salt and pepper until smooth; gradually whisk in the milk, beer and cream. Bring to a boil; cook and stir for 2 minutes or until thickened., Reduce heat. Stir in 2 cups cheddar cheese, fontina cheese and 1 tablespoon Parmesan cheese until melted. Add chives., Drain macaroni; stir into sauce. Transfer to a greased 3-qt. baking dish. Sprinkle with remaining cheddar and Parmesan cheeses., Bake, uncovered, at 400° for 15-20 minutes or until golden brown and heated through. Top with crumbled bacon. Let stand for 5 minutes before serving.

  • In a large microwave-safe bowl place the macaroni. Add water to the bowl to just cover the macaroni. Sprinkle with a pinch of salt. Microwave the macaroni on high for two minutes. Stir and continue to microwave at two minute intervals until the macaroni is cooked al dente. If the pasta absorbs all the water before being cooked, add more water. If there is additional water remaining when cooked, drain the pasta and return to the bowl. Stir in the Velveeta and milk. Microwave for 30 seconds on high, stir, and continue to melt for another 30 seconds or just until the Velveeta melts. Stir well. Sprinkle with black pepper, if desired. Divide the macaroni into six microwave-safe containers and store in the refrigerator until ready to reheat and eat.
