finely crushed graham crackers

2 tbsp.

granulated sugar

4 tbsp.

melted butter

(8-oz.) blocks cream cheese, softened

3/4 c.

sweetened condensed milk

1/3 c.

key lime juice

1 tsp.

key lime zest 

1 tsp.

pure vanilla extract

1 c.

chocolate chips

2 tsp.

coconut oil

2 tbsp.

finely crushed graham crackers

2 tsp.

key lime zest

Steps:

  • Line a mini muffin tin with liners. In a large bowl, combine crushed graham crackers, sugar, and melted butter. Pack about 1/2 a teaspoon of crust into each liner.  In a large bowl using a hand mixer, beat cream cheese until smooth. Add sweetened condensed milk, key lime juice, zest, and vanilla and beat until incorporated.  Divide mixture evenly between liners. Freeze until solid, at least 2 hours and up to overnight.  Remove key lime pies from liners and place on a baking sheet.  In a medium heat-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, until melted. In a small bowl, combine crushed graham crackers and zest.  Spoon chocolate over each key lime pie and top with graham cracker mixture. Freeze until chocolate is hardened, 30 minutes.

1 cup butter, softened
1/4 cup confectioners' sugar
2 teaspoons Key lime juice
2 teaspoons grated Key lime zest
2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup chopped macadamia nuts
ICING:
2 cups confectioners' sugar
1/4 cup Key lime juice
1 teaspoon grated Key lime zest

Steps:

  • Preheat oven to 400°. In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in lime juice and zest. Combine flour and salt; gradually add to creamed mixture and mix well. Stir in nuts., Shape into 1-in. balls. Place 2 in. apart on ungreased baking sheets; flatten slightly. , Bake 8-10 minutes or until bottoms are lightly browned. Remove to wire racks to cool completely., In a small bowl, combine icing ingredients. Dip cookies in icing; allow excess to drip off. Place on a wire rack; let stand until set. Store in an airtight container.
