This recipe is from my starving student college days. Its simple, quick and another cheap eats. Everyone still loves this recipe including kids. Enjoy!

1 (8 1/2 ounce) box Jiffy cornbread mix
1 lb ground beef
1 (1 1/4 ounce) package taco seasoning
1 (6 ounce) can tomato sauce
1 cup grated cheddar cheese

Steps:

  • Mix cornbread according to package directions. Cook ground beef and drain fat. Add, taco seasoning mix and water according to package. Add tomato sauce. Cook until slightly thickened. Pour meat mixture in a 8x8 cassarole dish. Add layer of grated cheese and then spread the cornbread mixture on top spreading it to the edges of the pan. Bake at 350 degrees for about 45 minutes or until brown.
  • Optional: serve with sour cream and taco sauce.

1 pound lean ground beef
1 cup chopped onion
2 teaspoons crushed garlic
1 (14.5 ounce) can corn
1 (14.5 ounce) can diced tomatoes
1 teaspoon chili powder, or more to taste
1 teaspoon salt
1 cup cornmeal
3 cups tomato juice
1 (6 ounce) can small pitted black olives
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with cooking spray.
  • Cook and stir beef, onion, and garlic in a skillet over medium heat until beef is browned, about 5 minutes. Stir in corn, tomatoes, chili powder, and salt; simmer until flavors combine, about 20 minutes. Stir in cornmeal. Add tomato juice and olives.
  • Pour beef mixture into the prepared baking dish.
  • Bake in the preheated oven until hot and bubbly, about 30 minutes. Sprinkle Cheddar cheese on top. Continue baking until cheese is melted, about 5 minutes.

Poke entire surface of cornbread with a fork and pour over enchilada sauce. Add beef and top with cheeses. Cover with foil and bake until cheese is melty, about 20 minutes. Switch oven to broil, remove foil, and broil until cheese turns golden, about 5 minutes.
