4 cups water
1 tablespoon minced fresh ginger
¼ cup loose-leaf jasmine green tea
1 1.75 ounce package regular powdered fruit pectin or 6 tablespoons classic powdered fruit pectin
¼ cup lemon juice
5 cups sugar

Steps:

  • In a medium saucepan combine the water and ginger. Bring to boiling; reduce heat. Simmer, covered, for 5 minutes. Remove from heat; stir in tea. Cover and let stand for 5 minutes. Pour mixture through a fine-mesh sieve into a large liquid measuring cup; discard solids. Measure exactly 3 1/2 cups liquid, adding water or discarding liquid if necessary.
  • Transfer the 3 1/2 cups liquid to a 6- to 8-quart heavy pot. Stir in pectin and lemon juice. Bring mixture to a full rolling boil, stirring constantly. Stir in sugar. Return to a full rolling boil, stirring constantly. Boil hard for 1 minute, stirring constantly. Remove from heat. Quickly skim off foam with a metal spoon.
  • Ladle hot jelly into hot sterilized half-pint canning jars, leaving a 1/4-inch headspace. Wipe jar rims; adjust lids and screw bands.
  • Process filled jars in a boiling-water canner for 10 minutes (start timing when water returns to boiling). Remove jars from canner; cool on wire racks. Makes 6 half-pints.

8 jasmine green tea bags (or either jasmine tea or green tea)
1/4 cup strained lemon juice
1 (1 1/2 ounce) package powdered pectin
5 cups sugar

Steps:

  • In a large saucepan, combine water and ginger. Bring to a boil over high
  • heat. Reduce heat and simmer, covered for 5 minutes.
  • Remove from the heat and add tea bags. Cover and let steep for 5 minutes.
  • Pour through a fine mesh sieve and discard ginger and tea bags. Measure
  • exactly 3 1/2 cups of the liquid (add water if there is not enough
  • liquid).
  • Pour into a large saucepan and stir in lemon juice. Stir in
  • pectin until dissolved. Bring to a full rolling boil over high heat,
  • stirring constantly.
  • Add sugar in a steady stream, stirring constantly. Return to a full
  • rolling boil, stirring constantly to dissolve sugar. Boil hard for 1 minute.
  • Remove from the heat and skim off foam if needed. Ladle into prepared
  • jars leaving a 1/4" headspace.
  • Process jars in a boiling water bath for
  • 10 minutes. Adjust time according to your altitude.
  • Serving suggestions: Use this jelly to glaze fruit flans or tarts.
  • Variations: Jasmine Green Tea Jelly: Omit the ginger.
  • Green Tea Jelly with Honey: Use regular green tea and replace 1/2 cup of
  • the sugar with liquid honey. If desired, omit the ginger.

Comments: This jelly is softly set and silky. I really enjoy the balance of the slightly bitter tea, lemon, and sweet flavors, that makes it more of a palate refresher than a sweet. Serve it after a meal with oriental flavors. It looks very good served in a small teacup. Jasmine green tea is especially lovely in this dessert.
