1?½ tablespoons rice vinegar
1?½ tablespoons reduced-sodium soy sauce
1 tablespoon water
2 teaspoons mirin
1 pound spinach, trimmed if necessary
1 teaspoon sesame oil
Toasted sesame seeds for garnish

Steps:

  • Put a large pot of water on to boil.
  • Meanwhile, whisk tahini, vinegar, soy sauce, water and mirin in a large bowl.
  • Cook spinach in the boiling water until it just turns bright green, 15 to 30 seconds for baby spinach, 45 seconds to 1 minute for mature spinach. Drain in a colander and rinse with cold water. Press or squeeze to remove excess water. Add the spinach to the dressing and toss to coat. Drizzle with sesame oil and sprinkle with sesame seeds, if desired.

Don't worry if the batter for this traditional German staple seems a bit thin—it should be more liquidy than a normal dough.

Number Of Ingredients 6

1 cup ricotta cheese, Greek yogurt, or buttermilk
3 eggs
1 teaspoon salt
1/2 teaspoon white pepper
1/2 teaspoon grated nutmeg
2?1/2 cups all-purpose flour

Steps:

  • 1. Boil a large pot of salted water.
  • 2. Meanwhile, in a large bowl, combine all the ingredients except the flour. Blend well, then slowly stir in the flour until the mixture becomes a stiff batter.
  • 3. Place a colander with large holes over the pot and, with a rubber spatula, press small amounts of the batter through the holes directly into the water.
  • 4. As the spaetzle gradually rise to the surface of the boiling water, use a slotted spoon to transfer them to a serving dish. Serve immediately, while still warm.

  • Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates within a second or two from the surface of the pan. Add the peanut or canola oil to the sides of the pan and tilt the pan to distribute. Add the eggplant. Stir-fry for three to four minutes until cooked through. Add the ginger and red pepper flakes, and stir-fry for 30 seconds. Add the cucumbers and scallions or chives. Stir-fry 30 seconds. Add the soy sauce mixture to the wok, and stir-fry one minute until the cucumber just begins to wilt. Remove from the heat and serve.

I love this deceptively simple dish. If you have all the ingredients, you can have a plate of delicious noodles on the table within 15 to 20 minutes, with prep included. There really isn't such a thing as a "lo mein" noodle, so don't try to find it on the shelf. You want to buy an egg noodle or pasta that's relatively thin and has some tooth. Some common names will be lo mein, chow mein, egg noodles or pancit noodles. Most markets have Japanese yaki soba noodles in the cold case, and those would work perfectly. Spaghetti or fettuccini cooked al dente and rinsed in cold water and drained in a colander will also make a great lo mein. The traditional difference between lo mein and chow mein is that lo mein is a soft noodle with some gravy, and chow mein is a crispy fried noodle tossed with or smothered in sauce. Another tip: Although sesame oil is a fat and you would assume it should be used to start the stir-fry, I want you to treat it like a sauce. Sesame oil has incredible aroma and flavor but burns at a low temp. Add it to a sauce instead and use a high-temp oil like canola or peanut for cooking.
