This drink is served throughout Mexico. It is nice and refreshing. It is similar to a tart cranberry tea drink. You may add more or less sugar to your taste if you prefer. Enjoy!

Number Of Ingredients 8

6 cups water
2 cups dried hibiscus petals
1 cinnamon stick
1 pinch ground cloves
1 pinch ground nutmeg
1 pinch ground allspice
½ cup chopped piloncillo (Mexican brown sugar cones)
1?½ cups white sugar

Steps:

  • Place 6 cups of water in a large saucepan; bring to a boil. Stir in the hibiscus petals, cinnamon, cloves, nutmeg, and allspice. Reduce heat to medium-low, and gently simmer until the water has turned a deep red, 30 to 45 minutes.
  • Stir the chopped piloncillo into the hibiscus water until dissolved, then set aside to cool 15 minutes. After cooling, strain the warm liquid into a 1 gallon pitcher through a wire mesh strainer. Squeeze as much liquid from the petals as you can, then discard the petals. Stir in the white sugar until dissolved, then pour in enough cold water to fill the pitcher. Serve immediately or let stand overnight for best taste.

Mexico's well-known jamaica drink, Agua de Jamaica or "hibiscus water." A perfect drink to serve with the mid-day comida. The flavor is sweet and tart at the same time and very refreshing.

2 cups dried hibiscus flowers
2 quarts water
1/2 cup sugar per pitcher of jamaica

Steps:

  • HIBISCUS CONCENTRATE
  • Put 2 quarts of water in a pot
  • Add 2 cups of dried hibiscus flowers to the water
  • Bring to a boil
  • As soon as the water boils reduce the heat to low and simmer for 10 minutes
  • After 10 minutes turn off the heat and allow the hibiscus concentrate to cool
  • PITCHER OF JAMAICA
  • Put 1/3 of the concentrate in a half-gallon pitcher and add the sugar
  • Fill the pitcher with cool water and stir vigorously to dissolve the water
  • Serve chilled or over ice

Season with salt and pepper. Keep warm.Meanwhile, combine tomatoes, onion, garlic, and chipotle chilies along with 2 cups of water in a large saucepan over medium heat. Cook, stirring occasionally, until tomatoes begin to break down, about 20 minutes. Remove from heat and transfer mixture to a blender, in batches if necessary (be cautious blending hot liquids). Purée until smooth. Carefully wipe out saucepan; add oil and return to medium-high heat. When oil begins to shimmer, carefully add tomato mixture and bay leaves. Bring to a boil, reduce to a simmer, and cook, stirring occasionally, until thickened, about 10 minutes. Season to taste with salt.Pour vegetable oil into a large skillet to a depth of 1/4-inch; heat over medium-high heat until shimmering. Working in batches, submerge tortillas and fry, turning once, until just softened, about 30 to 45 seconds (no longer, you do not want them crispy). Transfer to a paper-towel-lined plate to drain. Spoon 1/4 cup of filling down the center of each tortilla and roll to enclose. Spoon chipotle sauce over top and garnish with sour cream, cabbage, and cheese.
