My dad loved chocolate meringe pies and I tried many recipes before finding this one in a Virginia cookbook. It was by far his favorite and he was a chocolate pie conniseur. His way of asking me to make it for him was to come by and ask me if I knew anywhere that sold these pies. It is a little time consuming but so worth it! This one's for you, Pop!

2 cup(s) sugar
4 rounded tablespoon(s) all purpose flour
5 rounded tablespoon(s) dry cocoa
1/2 cup(s) butter
5 - eggs, seperated
2 1/4 cup(s) milk
1 teaspoon(s) real vanilla
1 - 9 inch deep dish pie shell
5 - egg whites, room temp
- pinch of salt
- pinch of cream of tartar
1/4 teaspoon(s) cider vinegar
10 tablespoon(s) sugar

Steps:

  • For the Pie: Mix all dry ingredients. Melt butter in a 10 inch skillet. Add dry mixture and mix lightly. Combine egg yolks with milk, add to mixture, stirring constantly. Cook slowly until really thick. Remove from heat, add vanilla, blend well and pour into baked pie shell and let cool.
  • For the meringue: Let 5 egg whites come to room temperature. Add a pinch of salt, a pinch of cream of tartar and 1/4 tsp. of vinegar. Beat until stiff and add 10 tablespoons of sugar until well blended. Pile on top of pie unevenly. Bake at 350 degrees for 15 minutes.

A skillet cookie is an impressive way to serve a classic dessert.

Number Of Ingredients 9

1 cup of firmly packed light brown sugar
½ cup of granulated sugar
1 cup of (2 sticks) unsalted butter, softened
1 teaspoon of vanilla extract
2 of large eggs
2 ½ cups of all-purpose flour
1 teaspoon of baking soda
1 teaspoon of salt
2 cups of chocolate chips or M&Ms

Steps:

  • Preheat the oven to 375 degrees Fahrenheit.
  • In a large bowl, using an electric mixer, beat both sugars and the butter until smooth. Beat in the vanilla. Add the eggs, one at a time, beating well after each addition. Add the flour, baking soda, and salt. Stir well with a wooden spoon. The dough will be stiff. Stir in the chocolate chips or M & Ms.
  • Oil or butter a 10.25 Inch Skillet (or spray with cooking spray). Pat the cookie dough evenly into the skillet. Bake until the edges are lightly browned, about 25-30 minutes.
  • Remove the skillet from the oven and let cool on a wire rack or trivet for 15 minutes. Cut the cookie into desired wedges and serve it directly from the skillet using a pie server.

  • Preheat oven to 375°. Place biscotti, amaretti cookies and sugar in a food processor; pulse until coarsely ground. Add butter; pulse until combined. In a small heavy saucepan, mix 1/4 cup sugar and flour. Whisk in milk. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from heat. In a small bowl, whisk a small amount of hot mixture into egg yolks; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Remove from heat. Stir in white chocolate, butter, orange extract and 1/4 teaspoon salt until chocolate is melted., Preheat oven to 350°. For meringue, in a large bowl, beat egg whites with remaining dash salt on medium speed until foamy. Gradually add remaining 1/4 cup sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved. Continue beating until soft glossy peaks form. , Transfer hot filling to crust. Spread meringue evenly over filling, sealing to edge of crust. Bake until meringue is golden brown, 12-15 minutes. Cool 1 hour on a wire rack. Refrigerate at least 6 hours before serving.
