A simple scalloped potato recipe passed down from my Irish ancestors, using ingredients you have on hand.

Number Of Ingredients 4

6 potatoes, peeled and thinly sliced
½ cup butter, cut into thin slices
salt and ground black pepper to taste
1 pint half-and-half

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange thinly sliced potatoes in a 9x13-inch baking dish.
  • Layer butter slices on top of potatoes. Season with salt and black pepper.
  • Pour half-and-half evenly over potato mixture.
  • Bake in preheated oven until sauce has thickened and potatoes are tender, 45 to 60 minutes.

This easy homemade Irish cream recipe is rich and creamy with just enough chocolate and coffee to balance the bourbon. Enjoy it over ice, chilled for dessert or combined with coffee for an after-dinner treat. It keeps for two weeks in the fridge, so you can package up bottles to give for holiday gifts as well.

1 (14 ounce) can sweetened condensed milk
2 large pasteurized eggs
8 ounces bourbon
¾ cup half-and-half
1 teaspoon instant coffee granules
1 teaspoon chocolate syrup

Steps:

  • Combine condensed milk, eggs, bourbon, half-and-half, coffee granules and chocolate syrup in a blender. Process until well blended and frothy, 30 to 45 seconds. (Alternatively, combine all ingredients in a large bowl. Using an immersion blender, process until smooth, 30 to 45 seconds.)
