3 medium ripe avocados, peeled and cubed
1 garlic clove, minced
1/4 to 1/2 teaspoon salt
1 small onion, finely chopped
1 to 2 tablespoons lime juice
1 tablespoon minced fresh cilantro
2 medium tomatoes, seeded and chopped, optional
1/4 cup mayonnaise, optional

Steps:

  • Mash avocados with garlic and salt. Stir in remaining ingredients, adding tomatoes and mayonnaise if desired.

fresh lime juice

1/4 c.

chopped red onion

kosher salt

whole ripe avocados

1/2 c.

diced tomato

1/4 c.

chopped cilantro

1

jalapeño, seeded and diced

Tortilla chips and fresh veggies, for serving

Steps:

  • In a medium bowl, combine the lime juice, onion and kosher salt. Let sit for 5 minutes. Meanwhile, halve the avocados lengthwise and remove the pits. Using a spoon, scrape the flesh of the avocado into the bowl with the onion mixture. With a fork, or potato masher, mash the avocados, making sure to leave it relatively chunky. Add the tomatoes, cilantro and jalapeño and stir together. Serve with tortilla chips and fresh veggies for dipping.
