HOW TO MAKE A BURRITO - BURRITO RECIPES - OLD EL PASO

This no-fuss burrito is a quick and tasty meal when you want to spend more time with your loved ones and less time in the kitchen.

Provided by Old El Paso

Total Time 10 minutes

Prep Time 10 minutes

Cook Time 0 minutes

Yield 4

Number Of Ingredients 7

6 Old El Paso™ Super Soft Large Flour Tortillas
Old El Paso™ Refried Beans
Old El Paso™ Mild Thick N Chunky Tomato Salsa
250g cooked rice
500g shredded leftover cooked chicken
250g grated cheese
1 ripe avocado

Steps:

  • Pierce the soft flour tortillas package and warm it in the microwave for 35-45 seconds.
  • Using the back of a spoon, spread a thin layer of the refried beans over each tortilla, almost to the edge. The refried beans help to hold the ingredients and tortillas together.
  • Add cooked rice, again spreading with the back of a spoon, leaving a gap of about 3cm from the edge of the tortilla.
  • On top of the rice, add sliced avocado forming a rectangular shaped “column”. Fresh ingredients like lettuce, red cabbage, or tomato work great, too.
  • Use a fork to shred the leftover chicken into bite-sized chunks and layer on top of the column of avocado.
  • Alternatively, to prepare uncooked chicken, place oil in large frying pan over a medium heat, add the chicken and cook until the meat is golden in colour no longer be pink inside.
  • Spoon a dollop of salsa on top of the chicken and sprinkle grated cheese on top of the salsa.
  • Now it’s time to roll the burrito – watch our video below to find out how!
  • Serve with crisps, tortilla chips, or even French fries.
  • For a more authentic style, wrap the burrito in foil – perfect for packed lunches or on the go.

Total Time 30 minutes

Prep Time 10 minutes

Cook Time 20 minutes

Yield 4

Number Of Ingredients 14

2 tbsp sunflower oil
500 g beef mince
1 onion (finely chopped)
4 garlic cloves (very finely chopped)
1 tbsp ground coriander
1 pinch cayenne pepper
1 tsp  of dried oregano
1 pinch caster sugar
400 g can chopped tomatoes
400 g can black beans
4 flour tortillas
400 g cooked rice
1 tbsp wine vinegar or cider vinegar
If not planning on freezing, a mixture of chopped tomatoes, avocado, lettuce, and cucumber

Steps:

  • Step one is to heat the sunflower oil up in a large pan. Fry the onions for 5 minutes and then add seasoning such as oregano and garlic, cooking for one to two minutes. Take the beef mince and place into the pan, stirring with the other ingredients until golden brown.
  • Stir sugar into the beef mixture, and then pour a little vinegar over it. If you aren’t planning on freezing your burritos, this is when you can add chopped tomatoes to the beef mixture and stir it in.
  • Simmer your beef mix for around 5 minutes, and then add the black beans, continuing to simmer for an additional 20 minutes. During this time, you can add additional spices depending on your preference.
  • Take the tortillas out of their packaging and begin to heat them according to the instructions on their packaging. Once you have heated the tortillas and they are ready to go, begin lining up rice and beef along with each tortilla, making sure to add any toppings you like such as tomatoes, cucumber, or lettuce.
  • Fold over the ends of the burrito in order to seal them so that the filling doesn’t fall out. Serve immediately, or leave to cool if you wish to freeze them.
