6 large russet potatoes, peeled
� cup half-and-half or whole milk
4 tablespoons unsalted butter, cut into 1-inch pieces
Kosher salt and freshly ground black pepper
Chopped fresh chives, for serving

Steps:

  • 1. Arrange the potatoes in a single layer in a medium-size microwave-safe container. Microwave on high until the potatoes are easily pierced with a fork, 7 to 9 minutes. 2. Immediately mash the hot potatoes with a potato masher over the microwave-safe dish. 3. Pour the half-and-half over the potatoes and dollop butter on the surface. Return the potatoes to the microwave and heat for 1 minute. Stir well to combine. Return to the microwave and heat for 1 minute more. Season well with salt and pepper. 4. If making ahead, cover tightly with plastic wrap and store in the refrigerator for up to one day. Right before serving, microwave on high until warmed through. Garnish with chives.

5 pounds red potatoes, cut into chunks
1 tablespoon minced garlic, or to taste
3 cubes chicken bouillon
1 (8 ounce) container sour cream
1 (8 ounce) package cream cheese, softened
½ cup butter
salt and pepper to taste

Steps:

  • In a large pot of lightly salted boiling water, cook the potatoes, garlic, and bouillon until potatoes are tender but firm, about 15 minutes. Drain, reserving water. In a bowl, mash potatoes with sour cream and cream cheese, adding reserved water as needed to attain desired consistency.
  • Transfer the potato mixture to a slow cooker, cover, and cook on Low for 2 to 3 hours. Just before serving, stir in butter and season with salt and pepper to taste.
