A classic French recipe of bun-less burger & chips, that can be found in every brasserie and bistro. Kids will love it and it's easy to create together at home

1 tbsp vegetable oil
4 shallots , very finely chopped
600g freshly ground beef (ask the butcher for something with roughly 15% fat - we used chuck)
8 thyme sprigs , leaves picked and chopped
2 tsp Dijon mustard
2 tbsp plain flour
200ml crème fraîche
1 egg yolk
6 tarragon sprigs, leaves picked and finely chopped
dressed green salad , to serve
4 large baking potatoes (such as Maris Piper or Russet), peeled
2 tbsp vegetable oil

Steps:

  • Heat the oil in a pan and add about 3 /4 of the shallots. Cook for 5-10 mins, stirring occasionally, until soft and starting to caramelise in places. Set aside to cool.
  • In a large bowl, combine the beef, thyme, 1 tsp Dijon and the cooled shallots. Season with black pepper but not salt at this stage (this can cause the meat to dry out). Shape into four patties and dust with flour. Put on a plate, cover with cling film and chill for at least 30 mins (or up to 2 hrs).
  • Meanwhile, prepare the frites. Slice the potatoes into skinny chips, tipping into a large bowl of cold water as you go. Drain, then transfer to a large pan and cover with fresh water, seasoning with salt. Bring to a fast simmer, boil for 1 min, then drain well. Tip the chips onto a clean tea towel or some kitchen paper, spread in a single layer so they dry and cool quickly. Heat oven to 200C/180C fan/gas 6.
  • Tip the chips into a bowl with the vegetable oil and 1 tsp salt. Toss to coat, then spread out over two large baking trays. Cook for 45 mins or until crisp and golden.
  • When the chips are about 15 mins from being cooked, heat a large frying pan with a drizzle of oil. Season the patties with salt on both sides and cook for 3-4 mins each side, or until they have a dark brown crust but are still slightly pink inside (or cook them for a little longer if you’d prefer them well done). Transfer to a plate, cover with foil and set aside to keep warm while you make the sauce.
  • Return the pan to the heat and tip in the remaining shallots. Fry for 1-2 mins to soften, then remove the pan from the heat and stir in the crème fraîche, remaining Dijon, the egg yolk and tarragon, as well as any resting juices from the beef patties. Season well. Serve the steak with the pommes frites and a green salad, with the Béarnaise sauce on the side.

Queen of cookery Delia’s steak and kidney pudding is made with flaky suet crust pastry and filled with a deep gravy-like filling. She says: ”It might be imagined that it’s difficult to make. Not so. I would say it takes about 40 minutes to prepare and assemble, then it steams away for five hours needing little more than a top up of boiling water. Some people (my husband) like extra gravy, which can be made with the meat trimmings.” How about Delia’s spiced cranberry and orange brûlées for pud?

For the suet crust pastry
350g self-raising flour
175g shredded beef suet
Salt and freshly milled black pepper
Cold water to mix
For the filling
560g chuck steak
225g ox kidney after trimming, so buy 275g
2 level tbsp well-seasoned flour
1 medium onion, sliced
Cold water*
1 tsp Worcestershire sauce
Salt and freshly milled black pepper
Equipment
You will also need…
A well-buttered 1.5-litre capacity pudding basin and a steamer

Steps:

  • To make the pastry, first sift the flour and salt into a large mixing bowl. Add some freshly milled black pepper, then add the suet and mix it into the flour using the blade of a knife. When it’s evenly blended, add a few drops of cold water and start to mix with the knife, using curving movements and turning the mixture around. The aim is to bring it together as a dough, so keep adding drops of water until it begins to get really claggy and sticky.
  • Now abandon the knife, go in with your hands and bring it all together until you have a nice smooth elastic dough which leaves the bowl clean. It’s worth noting that suet pastry always needs more water than other types, so if it’s still a bit dry go on adding a few drops at a time.
  • After that, take a quarter of the dough for the lid, then roll the rest out fairly thickly. What you need is a round approximately 32.5cm in diameter. Now line the bowl with the pastry, pressing it well all around.
  • Next chop the steak and kidney into fairly small cubes, toss them in seasoned flour, then add them to the pastry-lined basin with the slices of onion. Add enough cold water* to reach almost the top of the meat and sprinkle in a few drops of Worcestershire sauce and another seasoning of salt and pepper.
  • Roll out the pastry lid, dampen its edges and put it in position on the pudding. Seal well and cover with a double sheet of foil, pleated in the centre to allow  room for expansion while cooking.
  • Now secure it with string, making a little handle so that you can lift it out of the hot steamer. Then place it in a steamer over boiling water. Steam for 5 hours, topping up the boiling water halfway through. You can either serve the pudding by spooning portions straight out of the bowl, or slide a palette knife round the edge and turn the whole thing out onto a serving plate (which is more fun!)   • Heat oven to gas 6 200C/180C fan. Roll out larger ball of pastry and use to line a greased 23cm (9") pie dish. HANDY TIP!! To avoid a soggy base, sprinkle the pastry base with a spoonful of semolina then spoon in beef, onions and mushrooms using a slotted spoon, adding just enough of the liquid to be "saucy." Save remaining sauce and gently reheat and serve with finished pie. Brush the pastry rim with a little beaten egg. Roll out the smaller ball of dough for the pie top and gently lay it over the filling. Use a sharp knife to trim any overhanging pastry (you can use surplus to decorate top of pie). Crimp edges with fingers or fork, brush with beaten egg to glaze. Bake in oven for 30 mins until pie is golden brown and filling is piping hot. Serve with heated gravy.
