2 cups raw peanuts
2/3 cup white Karo
1 teaspoon vanilla
1 tablespoon red food coloring
2 tablespoons butter
1 cup half-and-half
2 1/2 cups sugar
1/2 cup peanut butter

Steps:

  • Combine all ingredients except peanut butter in large heavy pan.
  • Cook until the mixture reaches soft-ball stage.
  • Remove from heat and add peanut butter.
  • Beat with a wooden spoon until thick and the candy loses it's glossy look.
  • Drop by spoonfuls onto buttered foil, buttered foil pans, or buttered muffin tins. Let cool.

2?½ cups sugar
1 cup evaporated milk
? cup light corn syrup
3 cups raw peanuts
1 tablespoon butter
1 teaspoon vanilla extract

Steps:

  • Combine sugar, milk, syrup, and peanuts in a small Dutch oven. Slowly bring to a boil, stirring until sugar dissolves. Cover and continue to cook over medium heat 2 to 3 minutes to wash down sugar crystals from sides of pan. Uncover and cook, without stirring, until mixture reaches soft ball stage (234°).
  • Remove from heat. Add butter and vanilla (do not stir). Let cool to lukewarm (110°). Beat with a wooden spoon until mixture begins to thicken. Drop by tablespoonfuls onto waxed paper; let cool completely. Store in airtight containers in a cool place.

There was a candy co., "Tom's," in the South that made these wonderful pink peanut patties. This recipe tastes just as yummy! It's the raw peanuts --they're not cooked to roasted stage. I adapted the recipe from stove-top directions back in the late 60's. It's so easy my sons made it, too, as kids. No scorching, no continuous stirring: let the microwave work for you. I use a 2-qt. glass measuring cup with handle, a wooden spoon for stirring and have a glass lid that fits. The handle helps when the candy hits over 200* The cooling pad of waxed paper over newspaper keeps the wax from sticking to your counter top. Time numbers in brackets are for double batch. When I was a child, in the '50s, this was one of my favorite candies. If I had a dime, I'd stop and buy one on the way to school. They were so big, I could share one with a couple of friends. They were about 3 inches in diameter and 1/3- to 1/2-inch thick. About the time, it became hard to find them at the corner store, my mom found this recipe, which duplicated the original very closely. In fact, I think it even tastes better!

  • If you make it without the red food coloring and/or the red-skinned peanuts, it will taste the same. It just won’t look like the original. (To ME they don't taste as good, but I'm sure it's just the power of suggestion! I don't think red peanuts really taste much different than regular ones.)
