Beautiful brown, crisp, gingerbread cookie without molasses. Delicious. Roll and cut for gingerbread men. I've been using it for years.

1 cup butter
1?½ cups white sugar
1 egg
2 tablespoons dark corn syrup
4 teaspoons grated orange peel
3 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground cloves
½ teaspoon salt

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine butter and sugar in a large bowl; beat with an electric mixer until smooth and creamy. Add egg and beat until light and fluffy. Mix in corn syrup and orange peel until well combined.
  • Sift together flour, cinnamon, ginger, cloves, and salt in a separate bowl; stir into creamed butter mixture until blended. Shape dough into several balls, wrap in plastic wrap, and place in the refrigerator until thoroughly chilled, at least 1 hour.
  • Working in batches, place one ball of chilled dough on a floured surface and roll to 1/4-inch thickness. Cut out cookies with desired cookie cutters and place on ungreased cookie sheets. Repeat with remaining dough.
  • Bake in the preheated oven until edges are firm, 8 to 10 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

This gingerbread cookies recipe is very easy, uses common ingredients and is molasses-free!

3 cups flour
3 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1 tsp baking soda
1/4 tsp salt
1-1/2 cups butter (3 sticks at room temperature)
1 cup packed brown sugar
1/4 cup honey
1 egg
1 tsp vanilla extract
1/4 cup white sugar (for sprinkling (optional))
Icing (optional)

Steps:

  • In a bowl, mix flour, ginger, cinnamon, nutmeg, baking soda and salt.
  • In another large bowl, mix butter and brown sugar until well combined. Mix in the honey, egg and vanilla.
  • Add the flour mixture to the liquid mixture and mix until combined.
  • Shape the dough into a rectangle and wrap it in a plastic wrap. Refrigerate for at least 2 hours or overnight (or up to a week).
  • Preheat the oven to 350F.
  • Line a baking sheet with parchment paper.
  • Roll out the dough on a lightly floured surface until it's 1/8-inch thick.
  • Cut out the gingerbread cookies using the cookie cutters.
  • Put the cookies on a baking sheet and bake for 12 minutes.
  • Remove the gingerbread cookies from the oven and sprinkle with white sugar or decorate with icing of your choice.

i have a hard time finding molasses and this recipe was great. i substituted the white sugar for brown sugar to get a standard colour. At first after mixing the wet ingredients , i thought something went wrong because it seemed very runny and unlike cookies. i also thought the vinegar was a lot but i did research and it takes about 30 minutes for the scent to leave, mine smell really good now.
