1 3½- to 4-pound chicken
6 carrots, peeled
4 celery stalks
1 large yellow onion, quartered
2?½ teaspoons kosher salt
1 teaspoon whole black peppercorns

Steps:

  • Place the chicken in a large pot. Cut 3 of the carrots and 2 of the celery stalks into 1-inch pieces. Quarter the onion. Add the cut vegetables to the pot with the salt, peppercorns, and enough cold water to cover (about 8 cups). Bring to a boil. Reduce heat and simmer, skimming any foam that rises to the top, until the chicken is cooked through, about 30 minutes.
  • Transfer the chicken to a bowl and let cool. Strain the broth, discarding the vegetables. Return the broth to the pot. Thinly slice the remaining carrots and celery. Add them to the broth and simmer until tender, about 10 minutes. When the chicken is cool enough to handle, shred the meat and add it to the soup. Ladle into individual bowls.

1 tablespoon canola oil
1 pound boneless, skinless chicken thighs, cut into 1-in. pieces
1 cup chopped white onion (from 1 onion)
3 cups unsalted chicken broth
1 15-oz. can no-salt-added pinto beans, drained and rinsed
1 15-oz. can white hominy, drained and rinsed
1 cup jarred salsa verde
½ chopped fresh cilantro, divided
1 tablespoon fresh lime juice (from 1 lime)
1 avocado, chopped
crushed tortilla chips, for serving (optional)

Steps:

  • Heat oil in a large saucepan over medium-high. Add chicken and onion; cook, stirring often, until chicken is cooked through, beginning to brown slightly, and juices have mostly evaporated, 8 to 10 minutes.
  • Stir in broth, beans, hominy, and salsa verde. Bring mixture to a boil over medium-high. Reduce heat to medium and cook until hot, about 5 minutes. Stir in ¼ cup chopped cilantro and lime juice. Serve in bowls topped with avocado, remaining ¼ cup cilantro, and, if desired, tortilla chips.
