Steps:

  • Preparation requires raw materials: Let’s make it ourselves, don’t buy that kind of black tea bag, since Lipton black tea is made, it’s not as fragrant as using tea leaves. Of course, we really don’t need to cook expensive Jin Junmei. Shan Soochong black tea leaves will do.
  • Put the sugar in an anhydrous pot and heat it over medium heat until it turns amber. This method is to make the milk tea have a little caramel flavor. People who love to drink are absolutely obsessed with it. If you don't like it, skip this step. The color in the picture has already passed. Believe me, this white sugar changes color in seconds. I took a photo with one hand while looking at the pot, and it immediately burned. If you do it yourself, just watch the fire.
  • When the sugar changes color, immediately pour milk into the pot, and the tea leaves are also poured into the milk. During this process, the caramel will cake immediately, you can hear it, but it will slowly melt away and a nice milk tea color will appear.
  • The tea leaves will float on the milk at first, and soon it will absorb the water and will be immersed in the milk.
  • When cooking, you must pay attention to the state. Small bubbles appear densely, and the pan will soon be boiled. The fire must be low, otherwise the pan will blow.
  • To have a strong flavor, the trick here is to use a wooden stick (a rolling pin at home will do), pestle the tea leaves at one end and gradually crush them, in order to let the tea taste out. If you like the strong milk flavor, you can cook it for less time; if you like the tea flavor, you need to twist it for more time. If there is a pan-pot situation during the period, turn off the heat and turn on a low heat to cook again.

  • Bring all ingredients to a simmer in a small saucepan over medium, stirring often. Remove from heat; cover and let stand 5 minutes. Strain; discard solids.
