2 boxes (16 oz each) Betty Crocker™ Cake Mix Pound
Butter, eggs, and water (or milk) needed for cake mix
2 cans (12 oz each) Betty Crocker™ Whipped Frosting Fluffy White
1 tub (8 oz) frozen whipped topping, thawed
1 1/2 lb strawberries, wiped clean with a damp paper towel
36 oz red fondant
4 oz green fondant
Black food coloring marker

Steps:

  • Preheat oven to 350°F.
  • Spray four heart-shaped pans with non-stick cooking spray and line with parchment paper.
  • Make cake mixes according to package instructions. Divide batter equally among four heart shaped pans (each cake mix will make two layers of the cake for a total of four layers.)
  • Bake cakes for 20-25 minutes until a toothpick inserted in the center comes out clean.
  • Allow cakes to cool completely, then remove from pan and level them by cutting off any parts that puffed up past the edges.
  • Set one cake on a heart-shaped piece of cardboard. Cut 6-inch hearts out of two of the other cake layers.
  • Whisk frosting and whipped topping together. Spread or pipe frosting around the edge of the bottom layer.
  • Stack the one cut out layer on top, then pipe on more frosting and add the second cut out cake layer.
  • Fill the heart-shaped hole with strawberries, and spread frosting around the top edge of the cake. Place the final cake layer on top.
  • Carve cake into a more rounded-looking strawberry shape, if desired. This step is optional, but it really gives the cake a natural strawberry shape. It's pretty easy to do. Just carve the top edge curving downward and the bottom edge curving upward.
  • Cover the cake with the remaining frosting, smoothing it out well. If you aren't using fondant, be sure to tint the frosting red before doing this step.
  • If you are covering your cake in fondant, smooth fondant will look nice, but if you add indentations to it, your strawberry will have a more natural appearance. You can purchase fondant rollers with a dot pattern at craft stores and they are simple to use. Just roll out your fondant and then gently roll the pattern over the fondant.
  • Cut leaves out of green fondant and attach to the fondant covered cake using a very small amount of water. If you want, you can even curl your leaves up a bit to give them a more natural look.
  • Draw on seeds using a black food coloring marker.
  • Serve cake the day it is made.

My granddaughter, Leslie, was born on Valentine's Day, so every year I bake up this special strawberry heart-shaped cake for her. We love the berries folded right into the batter. It's a convenient way to whip up a delightful dessert since it starts with a boxed mix.

1 package white cake mix (regular size)
1 package (3 ounces) strawberry gelatin
3 tablespoons all-purpose flour
1/3 cup vegetable oil
4 large eggs
1 package (10 ounces) frozen sweetened sliced strawberries, thawed
1/2 cup cold water
1/2 cup butter, softened
5 to 5-1/2 cups confectioners' sugar
Red-hot candies, optional

Steps:

  • In a bowl, combine cake mix, gelatin and flour. Beat in oil and eggs. Drain strawberries, reserving 1/2 cup syrup for frosting. Add berries and water to batter; mix well. Divide batter between two waxed paper-lined 8-in. baking pans, one square and one round. , Bake at 350° for 30-35 minutes (square) and 35-40 minutes (round or until cake tests done. Cool for 10 minutes; remove from pans to wire racks to cool completely. , In a small bowl, combine butter and reserved syrup. Gradually add sugar; beat until light and fluffy, about 2 minutes. Place square cake diagonally on a 20x15-in. covered board. Cut round cake in half. , Frost cut sides; place frosted sides against the top two sides of square cake, forming a heart. Frost sides and top of cake. Decorate with red-hots if desired.

Heavily dust tops of cakes with confectioners' sugar and place edible flower or sliced stawberry on each cake for garnish, if desired. Serve cakes with whipped cream, Cool Whip or Redi-Whip . Store any uneaten cakes in the refrigerator, wrapped tightly in plastic wrap. Note: You may have extra strawberries and sauce left over. Store in refrigerator for another use.
