FROZEN HERB CUBES - HY-VEE RECIPES AND IDEAS

Don't throw away your extra fresh herbs. You can save them in the freezer by chopping them and placing them in ice cube trays and then pouring olive oil or melted butter over the top.

Steps:

  • 1.

    Choose firm, fresh herbs, from the store or your own garden; such as: thyme, rosemary, oregano, basil, or sage. Remove the stems and discard; chop the herbs as desired.

  • 2.

    Pack the wells of ice cube trays about 2/3 full of herbs. If desired, you can mix up the herbs; think about freezing sage, thyme, and rosemary together and use to roast whole chickens, sweet potatoes or root vegetables.

  • 3.

    Pour extra-virgin olive oil or melted unsalted butter over the herbs. Cover lightly with plastic wrap and freeze overnight.

  • 4.

    Remove the frozen cubes and store in freezer containers or small bags. Be sure to label each container or bag with the type of herb and oil inside.

  • 5.

    The frozen cubes can be tossed into your favorite pasta sauce, used as a base for soups when sautéing onions or used to sauté fresh vegetables, chicken or pork.

Freezing is a simple and excellent way to preserve fresh culinary herbs. Packing in ice cube trays makes it easy to always have fresh herbs on hand, adding fresh herb flavor to soups, sauces, and drinks. Some people prefer to freeze in a good quality olive oil, I prefer the boiling water method, which is listed in this recipe here today. You can freeze herbs individually or in combinations of other herbs.

herbs, of choice (basil, chives, cilantro, fennel, lovage, mint, oregano, parsley, rosemary, sage, tarragon, thyme, et)
boiling water

Steps:

  • Mince herb (s) of choice.
  • Pack minced herb (s) into an ice cube tray, each 3/4 full.
  • Fill with boiling water, (this will blanch the herbs before freezing and will help them retain their flavor and color).
  • Once the herbal ice cubes are frozen, you can pop them out of their tray and into freezer bags for storage.
  • Use as needed.
